Description

This seafood stew is a festive and comforting dish, perfect for a special meal. The combination of Norway lobsters, scarlet shrimp, large prawns, lobster, clams and fresh mussels, along with the sautéed vegetables and the touch of paprika, creates an intense and delicious flavor. The stew is a traditional dish of Mediterranean cuisine, ideal to enjoy with family or friends. I always prepare it with a good homemade fish stock to further enhance the flavor of the seafood. A dish that always triumphs!

Ingredients (19 ingredients)

  • 4 piece fresh Norway lobsters
  • 4 piece fresh scarlet shrimp
  • 4 piece fresh large prawns
  • 1 piece fresh lobster
  • 250 gramos fresh clams
  • 250 gramos fresh mussels
  • 1 piece green pepper
  • 3 piece ripe tomatoes
  • 6 dientes garlic
  • 2 slice dry bread
  • 1 litro fish stock or fumet
  • 1 piece onion
  • 10 piece skinless almonds
  • 1 rama fresh parsley
  • 1 cucharada sopera salt
  • 1 pinch ground black pepper
  • 1 chorro olive oil
  • 1 piece fresh squid
  • 1 cucharada sopera sweet paprika

Preparation (10 steps)

Seafood preparation

Clean all the seafood. Empty the squid by extracting the inside and cut it into slices one finger wide. Soak the clams in case they have sand. Set aside.

Sear the seafood

Pour a drizzle of olive oil in a large pan. Sear the Norway lobsters, the large prawns and the scarlet shrimp for 2 minutes per side. Remove and set aside.

Prepare the vegetables

Grate the tomatoes. Chop the green pepper, onion, garlic and parsley into small cubes. Prepare the skinless almonds. Set aside.

Sauté the vegetables

In the Thermomix glass, add the onion, green pepper and garlic cloves. Chop for 3 seconds at speed 5. Add a drizzle of olive oil and sauté for 4 minutes at 120°C at speed 1.

Add tomato and squid

4 min/212°F/Speed 1 100

Add the sweet paprika, stir and, without taking more than three seconds, add the grated tomato, ground black pepper and squid rings. Sauté for 4 minutes at 100°C at speed 1.

Fry the bread

In a separate pan, fry the slices of dry bread until golden brown. Remove and set aside.

Prepare the mash

In the Thermomix glass, add the skinless almonds and fried bread. Grind for 10 seconds at speed 7. Remove and set aside.

Incorporate the mash and the seafood

2 min/212°F/Linkslauf Speed 1 100 Reverse

Put the sauté back in the Thermomix glass. Add the bread mash and chopped parsley. Add the seafood that you had seared (Norway lobsters, large prawns and scarlet shrimp). Mix for 2 minutes at 100°C at speed 1 with left turn.

Add the stock

Pour in the fish stock, salt and rectify with salt if necessary. Cook for 10 minutes at 100°C at speed 1.

Add mussels, clams and lobster

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the already cleaned mussels and clams. Cut the lobster in half and introduce it also in the stew. Cook for 10 minutes at 100°C at speed 1.
