Description

This Mediterranean vegetable medley is an absolute favorite dish of mine! The combination of eggplant, peppers, onions and tomatoes, refined with fresh herbs, is simply unbeatable. I especially like to make it in the summer when the vegetables are fresh from the market. It tastes both warm and cold and is ideal as a side dish to grilled food or simply pure with some bread. The dish is vegetarian and vegan, so suitable for everyone. The preparation is super easy and doesn't take long, so it's also perfect for a quick dinner. A dash of sugar rounds off the taste.

Ingredients (13 ingredients)

  • 1 piece Eggplant
  • 2 piece red Pepper
  • 2 piece yellow Pepper
  • 1 piece Spanish onion
  • 4 piece Tomatoes
  • 2 clove Garlic
  • 2 Zweig Rosemary
  • 2 Zweig Thyme
  • 3 tbsp Olive oil
  • 100 g Tomato paste
  • 1 tsp Herbs of Provence
  • to taste Pepper
  • to taste Sugar

Preparation (6 steps)

Prepare vegetables

Wash the eggplant, cut into approx. 2 cm cubes, salt and leave to soak for 10 minutes. Then pat dry. Wash the peppers, core them and cut them into approx. 2 cm cubes. Peel and quarter the Spanish onion. Wash the tomatoes and dice them as well. Peel the garlic.

Chop onion and garlic

Put the Spanish onion and garlic in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté onion and garlic

Add olive oil and sauté for 3 min./120°C/speed 1.

Add vegetables and sauté

Add peppers and eggplant and sauté for 5 min./120°C/speed 1 reverse.

Add tomatoes, tomato paste and herbs

Thermomix® Setting
15 min/212°F/Speed 1 Linkslauf 100 Reverse

Add tomatoes, tomato paste, rosemary, thyme and herbs de Provence. Season with pepper and salt and simmer for 15 min./100°C/speed 1 reverse.

Season and serve

Season the ratatouille and refine with a little sugar if necessary. Serve hot.
