Description

This dish of hake in green sauce is a recipe that I often make at home. It is simple, quick and the result is a juicy fish with a sauce full of flavor. The key is in the fish stock, which gives it a special touch. The shallots provide a subtle sweetness that complements the flavor of the fish very well. Ideal for a weekday meal or when you don't have much time to cook. I hope you like it as much as we do! You can accompany it with white rice or steamed potatoes.

Ingredients (10 ingredients)

  • 3 clove Garlic
  • Extra virgin olive oil
  • 10 g Wheat flour
  • 5 g Sweet paprika
  • 200 ml Fish stock or fish broth
  • 40 ml White wine
  • 6 piece Shallot
  • 2 piece Hake loin
  • Salt
  • Ground black pepper

Preparation (7 steps)

Laminated garlics

We peel the garlic cloves (3 cloves) and put them in the glass. We program 3 seconds/speed 7 to chop them finely.

Sauté the garlics

We add extra virgin olive oil to the glass (amount necessary to cover the bottom). We program 5 minutes/120°C/speed 1. It is important to monitor that the garlics do not burn.

Add flour and paprika

We add the wheat flour (10 g) and the sweet paprika (5 g) to the glass. We program 1 minute/120°C/speed 1 to sauté the flour.

Incorporate the broth and the wine

We add the fish stock or fish broth (200 ml) and the white wine (40 ml) to the glass. We program 10 minutes/100°C/speed 2. We stir with the spatula to ensure that there are no lumps.

Add the shallots

We peel the shallots (6 units), cut them in half and add them to the glass. We program 10 minutes/100°C/speed 1 or until they are tender.

Cook the hake

4 min/Varoma/Speed 1 Varoma

We salt and pepper the hake loins (2 loins) on both sides. We place them in the Varoma container. We pour the sauce from the glass into the Varoma container. We program 4 minutes/Varoma/speed 1. We let it rest for a few minutes with the residual heat.

Serve

We serve the hake immediately with the green sauce and the shallots. We can accompany with white rice or steamed potatoes.
