Description

These mini baked panzerotti are a delicious alternative to classic pizza! Perfect as a snack for a party or an aperitif, they are easy to prepare and everyone likes them. The dough, prepared with the Thermomix®, is soft and tasty. The tomato and stringy mozzarella filling is a timeless classic. I often prepare them for my children, who adore them! You can also vary the ingredients of the filling according to taste, adding olives, cooked ham or mushrooms. The preparation is simple and quick, especially thanks to the help of our trusted Thermomix®. Try them, you won't regret it!

Ingredients (10 ingredients)

  • 250 g Type 0 flour
  • 150 ml Water
  • 10 g Fresh brewer's yeast
  • 5 g Salt
  • 1 tsp Sugar
  • 20 ml Extra virgin olive oil
  • 200 g Tomato sauce
  • 120 g Mozzarella
  • 1 tsp Oregano
  • 1 pinch Salt

Preparation (8 steps)

Preparation of the dough

Thermomix® Setting
2 min/Speed 4

Pour 250 g of flour into the Thermomix bowl, add 10 g of crumbled fresh brewer's yeast, 1 teaspoon of sugar and 120 ml of water. Set 2 Min./Stufe 4.

Addition of the remaining ingredients

Thermomix® Setting
2 min/Kneading speed

Add 5 g of salt and the remaining 30 ml of water. Continue kneading for 3 Min./Knetstufe. Finally, add 20 ml of extra virgin olive oil and knead for another 2 Min./Knetstufe.

Leavening of the dough

Transfer the dough to a lightly oiled bowl, cover with plastic wrap and let it rise in a warm place for about 4-5 hours, or until doubled in volume. Do not use the Thermomix for this step.

Preparation of the balls

After rising, turn the dough out onto a lightly floured work surface and divide it into 8 equal parts. Form 8 balls and cover them with plastic wrap. Do not use the Thermomix for this step.

Preparation of the seasoning

Pour 200 g of tomato sauce into a bowl, add a pinch of salt and 1 teaspoon of oregano. Mix well. Do not use the Thermomix for this step.

Filling and closing the muffins

Take the balls again, flatten them slightly and fill the center with 2 tablespoons of seasoned tomato sauce and 80 g of mozzarella cut into pieces. Close the edges towards the center until they are perfectly sealed and place them in a muffin tin with paper liners. Do not use the Thermomix for this step.

Final seasoning and first cooking

Season the muffins with the tomato sauce also on the surface. Bake in a preheated ventilated oven at 200°C for about 10 minutes. Do not use the Thermomix for this step.

Second cooking and garnish

Remove the muffins from the oven, add the remaining mozzarella (40 g) and bake again for 4-5 minutes. Once out of the oven, add a pinch of oregano. Do not use the Thermomix for this step.
