Description

This Thermomix® recipe for chocolate mousse with aquafaba is a vegan dessert with dark chocolate, oat drink and aquafaba as main ingredients. The preparation takes a total of 140 minutes, of which 20 minutes are active working time, and yields 4 servings. Ideal as a festive dessert or for lovers of light, vegan chocolate desserts. Perfect for cold days and special occasions.

Ingredients (5 ingredients)

  • 160 g vegan dark chocolate
  • 2 EL oat drink
  • 120 ml Aquafaba (draining liquid from chickpeas or beans)
  • 1 EL Sugar
  • 1 Pck. Vanilla sugar

Preparation (7 steps)

Grate chocolate

Add 20 g dark chocolate to the mixing bowl and chop for 10 sec/speed 8. Scrape down the sides with the spatula and chop for another 5 sec/speed 8. Transfer and set aside.

Melt chocolate

4 min/122°F/Speed 2 50

Roughly chop the remaining 140 g dark chocolate and add to the mixing bowl. Melt for 4 min./50°C/speed 2.

Stir in oat drink

20 sec/Speed 2

Add 2 tbsp oat drink to the melted chocolate in the mixing bowl and stir for 20 sec/speed 2. Transfer the chocolate mixture and let it cool slightly.

Whisk aquafaba

Thermomix® Setting
8 min/Speed 3.5

Add 120 ml aquafaba (draining liquid from chickpeas or beans), 1 tbsp sugar and 1 packet vanilla sugar to the mixing bowl. Insert the butterfly whisk and whisk for 8 min/speed 3.5 until an egg white-like consistency is achieved.

Fold in chocolate

30 sec/Linkslauf Speed 2 Reverse

Carefully fold the cooled chocolate mixture into the aquafaba foam in the mixing bowl using the spatula. Activate the reverse and mix for 30 sec/reverse speed 2.

Distribute and chill mousse

Divide the mousse into 4 small glasses and refrigerate for at least 2 hours.

Decorate mousse

Before serving, decorate the mousse with the grated chocolate.
