Description

This chocolate mousse is a true delight for all chocolate lovers! I especially like to make it for festive occasions, as it can be prepared wonderfully and tastes simply delicious. The bittersweet chocolate with its high cocoa content provides an intense aroma that harmonizes perfectly with the fluffy cream and meringue. A touch of grated chocolate as a decoration makes this mousse a real eye-catcher. It tastes best well chilled, when the flavors have fully developed. An absolute must for every chocolate fan!

Ingredients (4 ingredients)

  • 200 g Bittersweet chocolate
  • 3 piece Eggs Size L
  • 250 ml Whipping cream
  • 1 piece Bittersweet chocolate for decoration

Preparation (9 steps)

Separate eggs and whisk egg whites until stiff

Separate eggs. Place the egg whites in the mixing bowl and whisk with the butterfly 3 min./speed 3.5 until stiff. Transfer the meringue and refrigerate.

Whip cream until stiff

Place the cream in the mixing bowl and whisk with the butterfly 2 min./speed 3.5 until stiff. Transfer the whipped cream and refrigerate.

Grate chocolate

Thermomix® Setting
10 sec/Speed 8

Place 100g of chocolate in pieces in the mixing bowl and finely grate for 10 sec./speed 8. Transfer and set aside.

Melt chocolate

Place the remaining 100g of chocolate in pieces in a heat-resistant bowl and melt over a water bath over low heat. Make sure that the bowl does not touch the water. Let the melted chocolate cool slightly.

Beat egg yolks and stir in chocolate

1 min/Speed 3

Place the egg yolks in the mixing bowl and beat for 1 min./speed 3. Add the lukewarm, melted chocolate and stir in for 20 sec./speed 3.

Fold in cream

Thermomix® Setting

Add half of the whipped cream to the mixing bowl and fold in for 10 sec./reverse speed 2. Then add the remaining cream and fold in for another 10 sec./reverse speed 2.

Fold in meringue

Thermomix® Setting

Add half of the meringue to the mixing bowl and fold in for 10 sec./reverse speed 2. Then add the remaining meringue and fold in for another 10 sec./reverse speed 2.

Fold in grated chocolate

Add the grated chocolate to the mixing bowl and fold in for 10 sec./reverse speed 2.

Fill and chill mousse

Fill the mousse au chocolat into a large bowl or several small bowls. Garnish with coarsely grated chocolate as desired. Cover with plastic wrap and refrigerate for at least 8 hours, preferably overnight.
