Description

These cranberry chocolate muffins are a delightful treat, perfect for the festive season or any time you crave a little indulgence. I've been making these for years, and they always disappear quickly! The combination of tart cranberries and rich chocolate is simply irresistible. They're surprisingly easy to make, especially with the Thermomix®, and the orange glaze adds a lovely citrusy touch. These muffins are best enjoyed warm, straight from the oven, but they also keep well for a few days. They are perfect for a Christmas brunch or as a sweet snack during the holidays.

Ingredients (16 ingredients)

  • 175 g Butter
  • 225 g Flour
  • 1 tsp Baking soda
  • 100 g Sugar
  • 1 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 1 pinch Salt
  • 150 ml Yogurt
  • 1 tsp Vanilla
  • 2 piece Eggs
  • 1 piece Orange zest
  • 50 g Chocolate
  • 75 g Dried cranberries
  • 150 g Icing sugar
  • 2 tbsp Orange juice
  • 2 tbsp Pearl sugar

Preparation (7 steps)

Preheat oven and prepare muffin tray

Preheat the oven to 180°C (160°C fan/gas mark 4). Line a 12-hole muffin tray with paper muffin cases. No Thermomix settings are needed for this step.

Melt butter

Thermomix® Setting
2 min/122°F/Speed 2 50

Place the butter in the Thermomix bowl and melt for 2 Min./50°C/Stufe 2. Set aside to cool for 10 minutes.

Combine dry ingredients

Thermomix® Setting
10 Sec./Speed 3

Add the flour, baking soda, sugar, cinnamon, nutmeg, and a pinch of salt to the Thermomix bowl. Mix for 10 Sec./Stufe 3 to combine.

Combine wet ingredients

Thermomix® Setting
20 Sec./Speed 4

Add the yogurt, vanilla, and eggs to the cooled butter in the Thermomix bowl. Mix for 20 Sec./Stufe 4 until well combined.

Combine wet and dry ingredients

30 Sec./Speed 3/Linkslauf Reverse

Pour the wet ingredients into the dry ingredients in the Thermomix bowl. Add the orange zest, chocolate, and dried cranberries. Mix for 30 Sec./Stufe 3/Linkslauf until just combined, ensuring there are no pockets of flour. Use the spatula to scrape down the sides of the bowl if needed.

Bake the muffins

Divide the mixture evenly between the paper cases. Bake in the preheated oven for 30 minutes until risen and golden. Check they’re cooked by inserting a cocktail stick into the centre of one of the muffins. If any wet cake batter clings to the skewer, return to the oven for 5 minutes. No Thermomix settings are needed for this step.

Cool and glaze the muffins

Remove the muffins from the oven and leave to cool in the tin for at least 10 minutes. Meanwhile, add the icing sugar and orange juice to the Thermomix bowl. Mix for 15 Sec./Stufe 3 until a loose icing forms. Brush the orange glaze over each muffin, then sprinkle with a little pearl sugar, if using. Leave to cool completely before eating.
