Description

These vegan mushroom dim sum are a delicious finger food or a tasty appetizer. The filling consists of a variety of mushrooms, shallots, garlic and fresh herbs. Served with a soy sesame dip, they are a highlight at any party. Preparation with the Thermomix® takes about an hour.

Ingredients (15 ingredients)

  • 200 g Flour
  • 1 TL Salt
  • 130 ml Water, hot
  • 1000 g Mushrooms, mixed (Porcini mushrooms, Champignons, Chanterelles, King oyster mushrooms, Horn of plenty, Hedgehog mushroom)
  • 2 Shallot(s)
  • 2 Garlic clove(s)
  • 8 Stängel Flat-leaf parsley
  • 1 Bund Coriander
  • Sherry
  • 1 EL Miso paste
  • Salt and pepper
  • Chili flakes
  • Sunflower oil
  • Soy sauce
  • Sesame, roasted

Preparation (9 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 200 g flour, 1 tsp salt and 130 ml hot water into the mixing bowl and process for 2 min./kneading stage to a smooth dough.

Let the dough rest

Remove the dough from the mixing bowl, shape into a ball, wrap in cling film and let rest for 30 minutes.

Prepare mushrooms

Clean 1 kg mixed mushrooms and chop coarsely. The mushrooms should not be too small, as they will be chopped further in the next step.

Chop shallots and garlic

Put 2 shallots and 2 garlic cloves in the mixing bowl and chop for 3 sec./speed 5. Scrape down the sides with the spatula.

Chop mushrooms

Thermomix® Setting
5 sec/Speed 4

Add the prepared mushrooms to the shallots and garlic in the mixing bowl and chop for 5 sec./speed 4. Scrape down the sides with the spatula.

Prepare mushroom filling

Thermomix® Setting
10 min/248°F/Speed 1 120

Add sunflower oil to the mixing bowl, add the mushroom mixture and sauté for 10 min./120°C/speed 1. Add 8 sprigs of flat-leaf parsley and 1 bunch of coriander. Deglaze with sherry and season with 1 tbsp miso paste, salt, pepper and chili flakes to taste.

Shape dim sum

Roll out the dough thinly on a floured work surface and cut out circles (approx. 8 cm diameter). Place a spoonful of the mushroom filling in the middle, fold the dough together and seal the edges well.

Steam dim sum

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Pour 500 ml water into the mixing bowl. Place the dim sum in the Varoma and steam for 20 min./Varoma/speed 1.

Prepare and serve dip

Serve the steamed dim sum with soy sauce and roasted sesame.
