Description

These golden and light crêpes are a real delight, perfect for a gourmet breakfast or an impromptu dessert. The recipe is simple and quick, ideal for beginner cooks. I have been using this recipe for years and it is always a hit at home. The dough, prepared in the Thermomix®, is incredibly smooth and lump-free. They can be enjoyed plain, with sugar, jam, melted chocolate or even fresh fruit. A real treat for the whole family! The dough rests in the fridge for 20 minutes, which makes the crêpes even lighter and tastier.

Ingredients (6 ingredients)

  • 2 c à s of oil
  • 0.001 peu of oil for cooking
  • 50 cl of milk
  • 2 pinch of salt
  • 250 g of fluid flour
  • 3 piece eggs

Preparation of ingredients

Make sure you have all the ingredients on hand and ready to use. Measure the amounts needed for the number of crêpes you want.

Initial mixing of ingredients

Thermomix® Setting
20 sec/Speed 4

In the Thermomix bowl, add the 3 eggs, half of the 500 ml of milk and the 2 tablespoons of oil. Mix for 20 Sek./Stufe 4.

Gradual addition of flour and salt

Thermomix® Setting
30 sec/Speed 5

Gradually add the 250g of flour and the 2 pinches of salt to the Thermomix bowl. Mix for 30 Sek./Stufe 5.

Aeration of the dough

Thermomix® Setting
15 sec/Speed 6

Mix the dough in the Thermomix for 15 Sek./Stufe 6 to incorporate air and obtain a light dough.

Incorporation of the rest of the milk

Thermomix® Setting
20 sec/Speed 4

Add the rest of the 500 ml of milk to the Thermomix bowl and mix for 20 Sek./Stufe 4 to obtain a homogeneous dough.

Resting the dough

Pour the dough into a container and place it in the refrigerator for 20 minutes. This will allow the dough to relax and achieve a better texture.

Cooking the crêpes

Lightly grease a crêpe pan with a little oil. Heat the pan over medium heat. Pour a small ladle of batter into the hot pan and tilt the pan to spread the batter evenly. When the edges are colored and bubbles form, turn the crêpe over and cook the other side until golden brown.
