Description

This recipe for oyster mushroom ribbon noodles is a vegetarian main course that is quick and easy to prepare. The oyster mushrooms are processed with shallots, garlic and crème fraîche into a creamy sauce and served with ribbon noodles. Ideal for a hearty lunch or dinner.

Ingredients (10 ingredients)

  • 500 g Oyster Mushroom(s)
  • 2 Stück Shallot(s)
  • 1 Stück Garlic Clove(s)
  • 1 EL Rapeseed Oil
  • 2 EL Butter
  • 1 EL Crème fraîche
  • 0.5 Bund Parsley
  • 200 g Ribbon Noodles
  • Salt
  • Pepper

Preparation (6 steps)

Prepare oyster mushrooms

Clean 500 g oyster mushrooms and slice with the Wundermix WunderSlicer V2. Place the WunderSlicer V2 on the mixing bowl lid and select the desired slice (fine/coarse). Collect the cut material.

Chop shallots and garlic

Put 2 peeled and halved shallots and 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5.

Sauté

Add 1 tbsp rapeseed oil and sauté for 3 min./120°C/speed 1.

Fry oyster mushrooms

Thermomix® Setting
5 min/248°F/Linkslauf/Speed 1 248°F Reverse

Add 2 tbsp butter and the prepared oyster mushrooms and sauté for 5 min./120°C/reverse/speed 1.

Refine sauce

Thermomix® Setting
2 min/194°F/Linkslauf/Speed 1 194°F Reverse

Add 1 tbsp crème fraîche and stir in for 2 min./90°C/reverse/speed 1.

Season and serve

Season with salt and pepper. Chop 1/2 bunch of parsley and stir in. Cook 200 g ribbon noodles according to package instructions and serve with the sauce.
