Description

These nut-seed-bars with coconut are a delicious and healthy snack for in between. I often make them when I need some energy for the day or just feel like something sweet. The combination of nuts, seeds, dates and shredded coconut is simply unbeatable. They are super easy and quick to prepare in the Thermomix® and can be prepared well in advance. Perfect for on the go, as a small energy boost after sports or simply as a healthy treat. They are vegan, gluten-free and lactose-free - so suitable for almost everyone! Vary the nuts and seeds as you like to create your own favorite mix.

Ingredients (9 ingredients)

  • 100 g Walnuts
  • 50 g Chia seeds
  • 50 g Linseeds
  • 25 g Shredded coconut
  • 100 g Pumpkin seeds
  • 2 tbsp Chopped pistachios
  • 60 g Raisins
  • 220 g Dates pitted
  • 2 tbsp Coconut oil

Preparation (6 steps)

Grind nuts and seeds

Thermomix® Setting
15 sec/Speed 10

Put 100 g walnuts, 50 g chia seeds, 50 g linseeds, 25 g shredded coconut and 100 g pumpkin seeds (except for half a teaspoon each) into the mixing bowl and grind for 15 sec/speed 10. Scrape down with the spatula.

Add raisins and dates

20 sec/Speed 8

Add 60 g raisins and 220 g dates (pitted) and process for 20 sec/speed 8 into a sticky mass. If necessary, scrape down with the spatula and repeat the process.

Add coconut oil and mix

Thermomix® Setting
15 sec/Speed 4

Melt 2 tbsp coconut oil in a separate bowl (e.g. in the microwave). Add the melted coconut oil to the mixing bowl and mix for 15 sec/speed 4.

Mix in remaining ingredients

Use a spoon to fold half of the reserved walnuts, chia seeds, linseeds, shredded coconut, pumpkin seeds and 2 tbsp chopped pistachios into the mixture in the mixing bowl.

Shape and cool mixture

Line a rectangular baking pan (approx. 20x20 cm) with baking paper. Pour in the mixture and spread evenly. Sprinkle the other half of the reserved dry ingredients over the top and press down lightly. Cover the mold and refrigerate for at least 1 hour.

Cut bars

Remove the chilled mixture from the mold and cut into 12 bars. Store the bars in the refrigerator.
