Ingredients (14 ingredients)

  • 500 g Wheat flour (Type 700)
  • 240 ml lukewarm milk
  • 10 g fresh yeast
  • 60 g sugar
  • 1 Pck. vanilla sugar
  • nach Geschmack salt
  • 1 Stück Egg (size M)
  • 60 g soft butter
  • lemon zest
  • 2 Tassen Milk
  • 300 g Walnuts
  • 200 g Hazelnuts
  • 120 g Powdered sugar
  • 1 EL Cinnamon

Preparation (7 steps)

Prepare the yeast

Add 240 ml lukewarm milk, 10 g fresh yeast and 60 g sugar to the mixing bowl and mix for 2 min./37°C/speed 2.

Prepare the dough

Thermomix® Setting
3 min/Kneading speed

Add 500 g wheat flour (Type 700), 1 packet vanilla sugar, pinch of salt, 1 egg (size M) and a little lemon zest and knead for 3 min./kneading stage.

Incorporate the butter

Thermomix® Setting
2 min/Kneading speed

Add 60 g soft butter and continue kneading for 2 min./kneading stage until completely incorporated into the dough.

Let the dough rest

Remove the dough and knead for 2-3 minutes into a smooth dough. Place in a greased bowl, cover and let rest at room temperature for 1 hour.

Prepare the filling

Meanwhile, put 300 g walnuts, 200 g hazelnuts, 120 g powdered sugar and 1 tbsp cinnamon into the mixing bowl and chop for 5 sec./speed 5. Put 2 cups of milk into a second container for dipping.

Shape the crescents

Roll out the dough thinly on a floured work surface and portion into approx. 14 equal-sized pieces. Briefly dip each piece of dough in milk, then roll in the nut mixture and shape into a crescent on the work surface.

Baking

Place the shaped crescents on a baking sheet lined with baking paper and bake in a preheated oven at 180°C top/bottom heat for approx. 15-20 minutes.
