Description

This butter stollen with marzipan, prepared in the Thermomix®, is a festive yeast pastry with almonds, butter and flour. The recipe makes about 16 servings and is ideal for the Christmas season or as a special breakfast. The preparation time is about 240 minutes, of which 60 minutes are active working time. Perfect for those who love traditional Christmas pastries and use the Thermomix® for baking.

  • 100 g Almonds
  • 125 ml Milk
  • 1 Stück Yeast (cube)
  • 50 g Sugar
  • 500 g Flour
  • 125 g Butter (soft)
  • 1 Stück Egg
  • 1 Prise Salt
  • 125 g Butter (soft)
  • 75 g Sugar
  • 1 Päckchen Vanilla sugar
  • 0.5 TL Lemon zest (grated)
  • 50 g Almonds (ground)
  • 100 g Raisins
  • 50 g Candied orange peel
  • 50 g Candied lemon peel
  • 200 g Marzipan roll
  • 50 g Butter (melted)
  • 1 etwas Powdered sugar

Chop almonds

Put almonds into the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Prepare yeast

Put 125 ml milk, 1 cube of yeast and 50 g sugar into the mixing bowl and stir for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Put 500 g flour, 125 g soft butter in pieces, 1 egg, 1 pinch of salt and the yeast-milk mixture into the mixing bowl and process into a dough for 3 min./kneading stage.

Let dough rise

Put the dough in a bowl, cover and let rise in a warm place for about 1 hour until the volume has doubled.

Prepare filling

Add 125 g soft butter in pieces, 75 g sugar, 1 packet of vanilla sugar, 1/2 tsp grated lemon zest, 50 g ground almonds, 100 g raisins, 50 g candied orange peel, 50 g candied lemon peel and the chopped almonds to the dough and knead in for 2 min./reverse/speed 2.

Shape dough

Briefly knead the dough on a floured work surface. Roll out into an oval (approx. 30 x 20 cm). Place a marzipan roll (approx. 200 g) in the middle. Fold one side of the dough over it, placing the other side slightly offset over it. Place the stollen on a baking tray lined with baking paper.

Bake stollen

Bake the stollen in a preheated oven at 175°C (top/bottom heat) for approx. 60 minutes.

Finish stollen

Brush the still hot stollen with 50 g of melted butter and sprinkle with powdered sugar.
