Description

These oat flakes-berry-cups are a wonderful start to the day or a delicious snack for in between! I love how easy and quick they are to prepare. The combination of crunchy oat flakes, sweet berries and creamy yogurt is simply unbeatable. Perfect for a relaxed weekend breakfast or as a healthy treat for the whole family. The preparation is very easy and the cups can be prepared wonderfully. In the summer they taste especially good with fresh raspberries and blueberries. Try it out, you will be thrilled!

Ingredients (9 ingredients)

  • 1 piece Banana
  • 90 g Maple syrup
  • 100 g 5-grain flakes
  • 50 g Soy flakes
  • 50 g Shredded coconut
  • Greek yogurt
  • Jam
  • Raspberries
  • Blueberries

Preparation (7 steps)

Preheat oven and prepare muffin tin

Preheat the oven to 180°C. Grease a muffin tin with some oil or baking spray.

Mix dry ingredients

Put 100g 5-grain flakes, 50g soy flakes and 50g shredded coconut into the mixing bowl and mix for 5 sec./speed 4. Then transfer to a bowl.

Add maple syrup

Thermomix® Setting
5 sec/Speed 3

Put 90g maple syrup into the mixing bowl and stir in for 5 sec./speed 3. Then add to the dry ingredients in the bowl.

Prepare and mix banana

Thermomix® Setting
5 sec/Speed 5

Peel 1 banana, cut into pieces and put into the mixing bowl. Puree for 5 sec./speed 5. Then add to the muesli mixture in the bowl and mix everything well.

Fill muffin tins

Evenly fill the muesli mixture into the prepared muffin tins and press to the edge with your fingers so that small bowls are created.

Bake muesli muffins

Place the muffin tins in the preheated oven and bake for 20-30 minutes until the cups have the desired browning.

Cool and fill

Remove the baked muesli muffins from the oven and let them cool completely. Fill with Greek yogurt, jam, raspberries and blueberries as desired.

These oat flakes-berry-cups are more than just a recipe for me; they are a reminder of my childhood. My grandma often baked similar snacks, but without Thermomix® and mostly with apples instead of berries. I have adapted the recipe over the years until I developed this version, which is so quick and easy to prepare and yet tastes so delicious. The ingredients all play an important role. The 5-grain flakes form the basis and provide a hearty, nutty taste and a pleasant texture. The soy flakes contribute additional protein and make the cups more filling. The shredded coconut brings a light sweetness and an exotic touch that harmonizes wonderfully with the berries. The maple syrup serves as a natural sweetener and gives the cups a caramel-like note. The banana not only provides sweetness, but also binding and moisture, which makes the cups nice and juicy. When preparing in the Thermomix®, it is important not to mix the dry ingredients for too long, otherwise they will become too fine and the cups will lose their crispy texture. When pureeing the banana, a short time is enough to obtain a homogeneous mass. Make sure to fill the muffin tins evenly with the muesli mixture and press them well to the edge so that stable bowls are created. The baking time may vary depending on the oven. Observe the cups carefully and take them out as soon as they are golden brown. For a vegan version, you can replace the Greek yogurt with a plant-based alternative such as soy yogurt or coconut yogurt. Instead of maple syrup, you can also use agave syrup or rice syrup. To vary the taste, you can add spices such as cinnamon, cardamom or vanilla to the muesli mixture. Chopped nuts such as almonds, hazelnuts or walnuts also go very well with it. The oat flakes-berry-cups are a versatile snack that can be served on various occasions. They are perfect as a breakfast, as an afternoon snack or as a dessert. You can enjoy them plain or garnish with yogurt, jam, fresh fruit or nuts. In the summer they taste especially good with fresh berries of the season. The baked muesli muffins can be stored well. In an airtight can, they remain crispy for up to a week. You can also prepare them and store them unbaked in the refrigerator. Simply fill with the desired ingredients before serving.
