Description

This orange Bundt cake with spelt whole wheat is prepared in the Thermomix® and is a vegan delicacy for breakfast or festive occasions. The main ingredients are spelt whole wheat flour, oranges, apple sauce, raw cane sugar and margarine. With a preparation time of 90 minutes (30 minutes working time), the recipe yields 12 servings. Ideal for those looking for a juicy, vegan cake that also impresses as Christmas pastry.

Ingredients (12 ingredients)

  • 1 Schote(n) Vanilla
  • 150 g Margarine
  • 100 g Raw cane sugar
  • 1 Prise(n) Salt
  • 120 g Apple sauce
  • 2 Organic Oranges
  • 350 g Spelt whole wheat flour
  • 1 Pck. Baking powder
  • 150 ml Soy drink
  • Fat for the mold
  • 4 TL Orange juice
  • 100 g Powdered sugar

Preparation (9 steps)

Prepare oranges

Wash the oranges. Grate the zest of one orange and set aside. Grate the zest of the other orange with a zester and store covered in the refrigerator. Then squeeze both oranges with a citrus press and measure out 100 ml of orange juice.

Beat vanilla, margarine, sugar and salt until frothy

Cut open the vanilla pod and scrape out the pulp. Put vanilla pulp, 150 g margarine, 100 g raw cane sugar and 1 pinch of salt into the mixing bowl and beat until frothy for 3 min./speed 4.

Stir in apple sauce

Add 120 g apple sauce to the mixing bowl and stir in for 20 sec./speed 3.

Mix dry ingredients

Mix 350 g spelt whole wheat flour, 1 packet of baking powder and the zest of one orange in a separate bowl.

Stir in flour mixture, orange juice and soy drink

Add the flour mixture, 100 ml orange juice and 150 ml soy drink to the mixing bowl and stir for 40 sec./speed 4. If necessary, use the spatula to push down from the edge and stir briefly again.

Pour batter into mold and bake

Preheat the oven to 180 °C top/bottom heat. Grease a Bundt cake pan. Pour the batter into the prepared Bundt cake pan and bake in the preheated oven for approx. 45 minutes. Perform a toothpick test.

Let the cake cool

After baking, let the cake cool in the mold for 10 minutes, then turn it out and let it cool completely.

Prepare icing and decorate cake

Put 4 tsp orange juice and 100 g powdered sugar into the mixing bowl and stir for 20 sec./speed 3 to a thin icing.

Cover cake with icing

Sprinkle the cooled cake with the icing and decorate with the orange zest. Then serve.
