Description

This orzo spinach bake is a vegetarian main course that is easy to prepare. With orzo, fresh spinach, sun-dried tomatoes, and feta, it is rich in Mediterranean flavors. Preparation takes about 40 minutes and serves 4. Ideal for a quick lunch or dinner.

Ingredients (10 ingredients)

  • 120 g Orzo (Kritharaki)
  • 360 ml Vegetable Broth
  • 100 g fresh spinach
  • 60 g sun-dried tomatoes
  • 1 Stück Zucchini
  • 120 g Feta
  • 2 EL Olive Oil
  • Salt
  • Pepper
  • 1 TL Maple Syrup

Preparation (6 steps)

Cook Orzo

Thermomix® Setting

Add 120 g orzo and 360 ml vegetable broth to the mixing bowl and cook for 15 min./100°C/speed 1.

Prepare Spinach

Wash and roughly chop 100 g fresh spinach.

Cut Sun-Dried Tomatoes

Cut 60 g sun-dried tomatoes into strips.

Slice Zucchini

Place the WunderSlicer V2 on the mixing bowl lid and select the fine slicing insert. Slice 1 zucchini into thin slices and collect the sliced pieces.

Prepare Casserole

Add the cooked orzo, spinach, sun-dried tomatoes, zucchini, 120 g feta, 2 tbsp olive oil, salt, and pepper to a casserole dish and mix well. Optionally add 1-2 tsp maple syrup.

Bake Casserole

Bake the casserole in a preheated oven at 180°C for 25 minutes, or until golden brown.
