  • 1 kg Fresh salmon (in a whole loin)
  • 2 piece Potatoes
  • 1 piece Italian green pepper
  • 2 piece Spring onion
  • 2 piece Tomato
  • White wine
  • to taste Salt
  • to taste Pepper

Preparation of the vegetables

Peel the potatoes and cut them into half cm thick slices. Cut the pepper into strips. Cut the spring onion into strips. Cut the tomatoes into thin slices.

Place the potatoes, pepper, spring onion and tomato in the Thermomix bowl. Add salt to taste, pepper to taste, a little olive oil, a little water and a little white wine. Mix 5 Sec./Speed 4.

Vegetable sauce

Pour the vegetable mixture into a baking tray. Bake at 190ºC for 20 minutes, or until the potatoes are taking on color and the vegetables are well poached.

Salmon preparation

Sprinkle the salmon loin with black pepper and salt to taste.

Baking the salmon

Place the seasoned salmon loin on the bed of vegetables in the baking tray. Add a few rings of the green part of the spring onion, distributing them on top. Bake at 190ºC for 20-25 minutes, or until the salmon is cooked.

Gratin (optional)

For a final gratin touch, turn on the oven grill for 1 minute to toast the surface of the fish a little. Watch that it does not burn.
