Description

These oysters au gratin with béchamel and crab are a festive and refined starter, perfect for the holiday season. I have been preparing this recipe for years and it always makes a splash with my guests. The creamy béchamel, the tasty crab and the gratiné gruyere go wonderfully with the freshness of the oysters. It is a relatively quick dish to prepare, ideal for impressing your guests without spending hours in the kitchen. Feel free to use fresh crab for an even more intense taste. A real delight!

Preparation of the milk infusion

In the Thermomix bowl, pour the milk, add the roughly chopped shallot, the bay leaves, the star anise, the salt and the pepper. Heat everything for 8 Min./90°C/Stufe 1.

Infusion

Remove the bowl from the Thermomix and let the mixture infuse for 15 minutes.

Preparation of the roux

In the Thermomix bowl, put the butter and melt for 2 Min./50°C/Stufe 2.

Add the flour and mix for 1 Min./90°C/Stufe 3 to form a roux.

Preparation of the béchamel

Filter the infused milk to remove the solids. Pour the filtered infused milk into the Thermomix bowl and cook for 5 Min./90°C/Stufe 4. Add the sherry and mix 10 Sek./Stufe 3.

Preparation of the oysters

Open the oysters, keeping the part to which the oyster is attached, as well as its juice. Place the oysters on a baking sheet, in which you have put coarse salt, so that the oysters stand horizontally.

Garnishing the oysters

Place a little crab meat on each oyster, then completely cover the oyster with a little béchamel.

Gratinating

Put the grated Gruyère on everything to brown, then sprinkle with paprika.

Oven cooking

Put in the oven preheated to th.6 (180°C), for 15 minutes of cooking.

Grill

Then, put the oven to Broil (Grill) for 5 minutes or until the cheese has lightly browned.
