Description

This bulgur pan with vegetables is a quick and easy dish, ideal for student cuisine. With peppers, zucchini, eggplant and strained tomatoes, it is rich in vegetables and therefore a healthy meal. Preparation takes only about 35 minutes and is enough for 4 servings. Perfect for a quick lunch or dinner.

Ingredients (14 ingredients)

  • 1 Stück Onion
  • 1 Zehe Garlic
  • 2 EL Olive oil
  • 1 Stück red Pepper
  • 1 Stück yellow Pepper
  • 1 Stück Zucchini
  • 0.5 Stück Eggplant
  • 1 TL Italian herbs
  • 2 EL Tomato paste
  • 400 g Strained tomatoes
  • 250 g Bulgur
  • 250 ml Vegetable broth
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (7 steps)

Chop onion and garlic

Peel and quarter 1 onion and put 1 clove of garlic in the mixing bowl and chop for 3 sec./level 5. Scrape down with the spatula.

Sauté onion and garlic

Add 2 tbsp olive oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/level 1.

Chop peppers, zucchini and eggplant

Cut 1 red pepper, 1 yellow pepper, 1 zucchini and 1/2 eggplant into coarse pieces, add to the mixing bowl and chop for 5 sec./level 4. Scrape down with the spatula.

Season the chopped vegetables with 1 tsp Italian herbs, salt and pepper and sauté for 5 min./120°C/reverse rotation level 1.

Add tomato paste and strained tomatoes

Add 2 tbsp tomato paste and 400 g strained tomatoes to the vegetables in the mixing bowl and simmer for 10 min./100°C/reverse rotation level 1.

Add bulgur and cook

Add 250 g bulgur and 250 ml vegetable broth to the vegetables in the mixing bowl and cook for 10 min./100°C/reverse rotation level 1.

Season and serve

Season the bulgur pan with salt, pepper and possibly some more Italian herbs. Serve the bulgur pan.
