Description

This chicken spring onion pan with apricots is a quick and easy main course, ideal for student kitchens. The dish is prepared in about 30 minutes and offers a delicious combination of sweet and savory flavors. The portions are designed for 4 people and are perfect for a quick lunch or dinner.

Ingredients (10 ingredients)

  • 250 g Chicken fillet
  • 0.5 Stück Spring onions
  • 70 g Dried apricots
  • 1 EL Oil
  • Salt
  • 0.5 TL Chili flakes
  • 100 ml Apple juice
  • 4 EL Soy sauce
  • 130 g Rice
  • Pepper

Preparation (7 steps)

Preparation of the ingredients

Pat 250 g chicken fillet dry and cut into slices. Clean 1 bunch (approx. 100 g) spring onions, wash, drain and cut into oblique pieces/rings. Quarter 70 g dried apricots.

Fry chicken

Heat 1-2 tbsp oil in a large pan. Fry the chicken slices in it for 3-4 minutes, turning occasionally. Remove from the pan and set aside.

Sauté spring onions and apricots

Add spring onions and apricots to the pan and sauté briefly. Season with salt and 1/2 tsp chili flakes.

Prepare sauce

Pour in 100 ml apple juice and 3 tbsp soy sauce, bring to a boil and simmer for 2-3 minutes.

Add chicken

Add the fried chicken fillet back to the pan and heat briefly.

Prepare rice

Steam rice according to package instructions.

Arrange

Stir rice into the chicken spring onion pan. Season with 2 tbsp soy sauce and possibly some pepper.
