Description

This seafood paella with chicken is a festive and delicious dish, perfect for sharing in a family meal or a special celebration. The combination of rice, chicken, squid and mussels creates an explosion of Mediterranean flavors that will transport you directly to the Spanish coast. I have been preparing it for years and it is always a success. Saffron gives it a special touch and an irresistible golden color. It is a hearty dish, ideal for lovers of rice and seafood flavors. Ingredients (14 ingredients)

  • 400 gr rice
  • 0.5 piece chicken cut into pieces
  • 500 gr mussels
  • 250 gr squid cleaned and chopped into rings
  • 1 piece green pepper, seeded and cut into strips
  • 1 piece bell pepper cut into strips
  • 0.5 cup tomato cut into pieces and fried
  • 1 can peas
  • 1 litro broth
  • 3 dientes garlics
  • 1 pinch saffron
  • 1 bunch parsley
  • 8 cucharadas oil
  • 1 pinch salt

Open the mussels steamed

Place 500 g of mussels in the Varoma container. Fill the bowl with 500 ml of water. Place the Varoma in its position and program 8 Min./Varoma/Stufe 1. Reserve the mussels and the broth.

Prepare the sauce

5 min/248°F/Speed 1 120

Pour 8 tablespoons of oil into the bowl. Add 1 green pepper (seeded and cut into strips) and program 5 Min./120°C/Stufe 1. Remove the pepper and reserve.

Sauté the chicken

8 min/Varoma/Giro a la izquierda/Velocidad cuchara Varoma Reverse

Add 1/2 chicken cut into pieces to the bowl and program 8 Min./Varoma/Giro a la izquierda/Velocidad cuchara. Remove the chicken and reserve.

Add 250 g of squid, cleaned and chopped into rings, to the bowl and program 5 Min./120°C/Giro a la izquierda/Velocidad cuchara. Remove the squid and reserve.

Prepare the rice

Add 1/2 cup of tomato cut into pieces and fried to the bowl and program 3 Min./120°C/Stufe 1.

Add 400 g of rice to the bowl and program 2 Min./120°C/Stufe 1.

Add the broth

Add 1 liter of boiling broth to the bowl and season with salt. Program 20 Min./100°C/Giro a la izquierda/Velocidad cuchara.

Prepare the mash

While the rice is cooking, crush 3 cloves of garlic, parsley and saffron in a mortar.

Add final ingredients

5 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Dilute the mash in a little broth and add it to the bowl, along with 1 can of peas, the chicken, the squid and the green pepper. Program 5 Min./100°C/Giro a la izquierda/Velocidad cuchara.

Finish the paella

Place the mussels on top of the rice and the strips of 1 bell pepper. Let stand for 5 minutes covered with a damp cloth before serving.
