Description

This banana bread with oats is an absolute treat! I often bake it when I have overripe bananas. The oat flakes give the bread a great texture and a slightly nutty taste. It is super easy to prepare and tastes delicious both warm and cold. Perfect for a cozy breakfast or as a sweet snack in between. If you like, you can add chocolate chips or nuts. A great recipe that is always well received by friends and family!

Ingredients (9 ingredients)

  • 3 piece Bananas (very ripe)
  • 70 g Butter (room temperature)
  • 2 piece Eggs (size M)
  • 2 tbsp Maple syrup
  • 100 g Wheat flour (Type 405)
  • 200 g Oat flakes (tender)
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 90 ml Milk

Preparation (7 steps)

Preheat oven

Preheat the oven to 170 °C fan oven.

Prepare bananas

Peel the bananas and mash them in a large bowl with a fork. Add the butter and work it into the banana puree. Beat the eggs and whisk well. Add together with the maple syrup to the banana puree and stir well with an electric mixer.

Mix dry ingredients

Mix flour, oat flakes, baking powder and a pinch of salt in a separate bowl.

Prepare dough

Add the dry ingredients to the banana puree and stir in with an electric mixer. Finally, add the milk and stir everything well again.

Prepare loaf pan

Grease a loaf pan with butter and sprinkle with a little flour so that the banana bread can be easily removed from the pan later.

Pour in dough and bake

Pour the dough into the prepared loaf pan and bake in the preheated oven for about 40-45 minutes.

Doneness test

Use a wooden skewer to check if the dough is cooked through. If no more dough sticks to the skewer, the banana bread is ready.
