Description

This soft gingerbread from the baking sheet, prepared in the Thermomix®, is an ideal dessert for the Christmas season. Main ingredients are almonds, butter, sugar, eggs and flour. The preparation of the cake takes a total of 75 minutes, of which 30 minutes are active work time. The recipe yields 24 servings and is perfect as a festive cake for the whole family.

  • 100 g Almonds
  • 200 g soft Butter, in pieces
  • 250 g Sugar
  • 3 Stück Eggs
  • 350 g Wheat Flour Type 405
  • 200 g Milk
  • 20 g Cocoa powder
  • 2 EL Honey
  • 2 EL Gingerbread spice
  • 0.5 Pck. Baking powder
  • 200 g Bittersweet chocolate coating, in pieces
  • 20 g Coconut fat
  • colorful Sugar sprinkles for garnish

Preparation (7 steps)

Grind almonds

Preheat oven to 180°C top/bottom heat. Line a baking sheet with baking paper. Put almonds into the mixing bowl and grind for 12 sec./speed 7 and transfer.

Beat butter and sugar until fluffy

Thermomix® Setting

Put butter and sugar in the mixing bowl and beat until fluffy for 2 min./speed 3. Add the eggs one after the other through the lid opening.

Prepare dough

Thermomix® Setting
20 sec/Speed 4

Add flour, almonds, milk, cocoa, honey, gingerbread spice and baking powder and mix everything for 20 sec./speed 4.

Baking

Spread the dough evenly on the baking sheet and bake in the hot oven for 20-25 min. Remove and let cool.

Chop chocolate coating

Put chocolate coating in the mixing bowl, chop for 5 sec./speed 8.

Melt chocolate coating

5 min/122°F/Speed 2 122°F

Push the chocolate coating down with the spatula. Add coconut fat and melt for 5 min./50°C/speed 2.

Decorate

Spread the glaze on the gingerbread, garnish with sprinkles and let cool completely. Cut the cake into pieces and serve.
