Description

This banana bread is an absolute delight and perfect for anyone who likes it a little healthier! I often bake it on the weekend for an extensive breakfast or as a tasty snack in between. The combination of ripe bananas, wholemeal spelt flour and crunchy walnuts makes it particularly juicy and aromatic. A touch of cinnamon and vanilla round off the taste wonderfully. The quark and oat drink make the bread nice and fluffy and keep it fresh for a long time. Be sure to try it out, you will be thrilled!

Ingredients (12 ingredients)

  • 6 piece Bananas
  • 1 piece Vanilla bean
  • 100 g Low-fat quark
  • 240 ml Oat-soy drink
  • 6 tbsp Acacia honey
  • 1 tsp Cinnamon
  • 40 g Walnut kernels
  • 400 g Wholemeal spelt flour
  • 100 g Ground hazelnuts
  • 4 tsp Baking powder
  • 2 piece Eggs
  • 1 Prise(n) Salt

Preparation (6 steps)

Prepare and puree bananas

Thermomix® Setting

Peel 6 bananas. Scrape out the pulp of a vanilla bean. Put 5 bananas, vanilla pulp, 100 g low-fat quark, 240 ml oat drink, 6 tablespoons of honey and 1 teaspoon of cinnamon into the mixing bowl and puree for 20 seconds/speed 8.

Chop walnuts

Thermomix® Setting

Put 40 g walnut kernels into the mixing bowl and chop for 5 seconds/speed 5. Transfer and set aside.

Mix dry ingredients

Put 400 g wholemeal spelt flour, 100 g ground hazelnuts, the chopped walnuts and 4 teaspoons of baking powder in a large bowl and mix.

Whisk eggs until frothy

In a separate bowl, whisk 2 eggs and 1 pinch of salt with a hand mixer until the mixture is almost white.

Prepare the dough

Add the pureed banana mixture to the dry ingredients in the bowl and mix well. Then carefully fold in the whisked eggs.

Bake banana bread

Line a loaf tin with baking paper. Pour the dough into the tin. Halve the last banana lengthwise and place decoratively on the dough. Preheat the oven to 180 °C top/bottom heat and bake the banana bread for 40-50 minutes (stick test!).
