Description

This rye-spelt-bread with yogurt and plum butter is a hearty bread that is ideal for breakfast or as a side dish. Preparation takes about 30 minutes, resting time is 3 1/2 hours and baking time is 1 1/4 hours. The recipe yields about 24 slices and is therefore perfect for a larger group. It is rich in rye and spelt and offers an interesting flavor note through yogurt and plum butter.

Ingredients (14 ingredients)

  • 2 tbsp liquid Butter
  • 200 g Yogurt
  • 400 ml Water
  • 100 g Plum butter
  • 40 g Molasses
  • 10 g fresh Yeast
  • 1 tsp Caraway powder
  • 4 tsp Sesame
  • 4 tsp Linseed
  • 2 tsp Salt
  • 400 g Whole grain rye flour
  • 400 g Spelt flour
  • 1 packet Natural sourdough
  • 1 piece Egg white

Prepare bowl

Brush a bowl with Butter and set aside.

Prepare yogurt mixture

Put 200 g yogurt, 200 ml water, 100 g plum butter and 40 g molasses in the mixing bowl and mix for 20 sec./speed 3.

Dissolve and mix yeast

Dissolve 10 g fresh yeast in 100 ml lukewarm water. Add the dissolved yeast together with the yogurt mixture, 1 tsp caraway powder, 3 tsp sesame, 3 tsp linseed, 2 tsp salt, 400 g whole grain rye flour, 400 g spelt flour and 1 packet of natural sourdough to the mixing bowl and knead for 3 min./kneading level. Add some water if necessary.

Dough rest

Place the dough in the prepared bowl, cover and let rise for about 3 hours. Stretch and fold every 30 minutes.

Shape loaf and let rest

Line a baking sheet with baking paper. Shape the dough into an oblong loaf, place on the baking sheet, cover and let rise for another 30 minutes.

Preheat oven

Preheat the oven to 240 degrees top and bottom heat.

Bake bread

Cut the loaf 3-4 times across, brush with the whisked 1 egg white, sprinkle with remaining sesame and linseed and bake for about 75 minutes - reduce the temperature to 180 degrees after 10 minutes. Then let the bread cool on a wire rack.
