Description

This rye mixed bread is a hearty and aromatic bread that tastes perfect with hearty spreads or simply pure with butter. I like to bake it when it gets colder outside, because the smell of freshly baked bread is simply unbeatable. The preparation is very simple and the Thermomix® takes over a large part of the work. The rye content gives the bread a slightly sour note and a great crust. If you like, you can add some rye chop, which gives the bread even more bite. An absolute must for all bread lovers!

Ingredients (7 ingredients)

  • 225 g Whole rye flour
  • 225 g Wheat flour Type 405
  • 2 tsp Salt
  • 1 tbsp Honey
  • 300 ml Water, lukewarm
  • 1 Pck. Dry yeast
  • 1 Prise(n) Sugar

Mix dry ingredients

Add 225 g whole rye flour, 225 g wheat flour type 405 and 2 tsp salt to the mixing bowl and mix for 10 sec./speed 4.

Prepare yeast

2 min/99°F/Speed 2 37

Add 1 tbsp honey, 300 ml lukewarm water and 1 pinch of sugar to the mixing bowl and heat for 2 min./37°C/speed 2 to activate the yeast. Then add 1 packet of dry yeast and stir in for 5 sec./speed 3.

Knead dough

Thermomix® Setting
3 min/Kneading speed

Add the flour mixture from step 1 and knead for 3 min./kneading stage to form a dough.

Let dough rest

Remove the dough from the mixing bowl, shape into a ball and let it rest covered in a bowl in a warm place for 45 minutes.

Shape and bake bread

After the resting time, place the dough on a baking sheet, cut it and brush with milk. Bake in a preheated oven at 180°C top/bottom heat for 40-45 minutes. Place a bowl filled with water in the oven.
