Description

These light sandwiches with chicken and grilled vegetables are perfect for a quick lunch, a summer picnic or a light dinner. Grilled chicken breast, zucchini and green tomatoes go perfectly with the freshness of low-fat yogurt, basil and mint. Preparing the yogurt sauce in the Thermomix® is child's play and adds a special touch to these sandwiches. Ideal for those looking for a healthy and tasty alternative to the usual stuffed sandwiches, these sandwiches are rich in protein and fiber, perfect for staying in shape without sacrificing taste. An explosion of Mediterranean flavors in every bite!

  • Green tomatoes
  • Zucchini
  • Low-fat yogurt
  • Basil
  • Mint
  • Baguette
  • Salt
  • Black pepper

Preparation (7 steps)

Preparation of the chicken breast

Clean the chicken breast of bones, cartilage and excess fat. Slice the chicken breast into slices that are not too thin. Heat a grill very well, preferably cast iron, and align the slices of chicken breast. Grill them first on one side, for about 2-3 minutes, then season with salt and black pepper. Turn the chicken breast slices also on the other side and grill them for another 2 minutes or so. Transfer the chicken breast to a separate tray to rest.

Toasting the baguette

In the same cast iron grill, transfer the opened baguette to a sandwich and toast the inside for about a minute.

Grilling the zucchini

Wash, trim and slice the zucchini, then align them in the grill and grill them quickly. Salt adequately.

Grilling the green tomatoes

Wash the green tomatoes, cut them in half, slice them and grill them. Add a little salt also on the grilled tomatoes.

Chop mint and basil

Put a few mint and basil leaves in the bowl and chop finely: 5 Sec./Stufe 7.

Preparation of the yogurt sauce

Add the low-fat yogurt to the bowl with the chopped mint and basil, salt and black pepper. Mix: 10 Sec./Stufe 3.

Assembling the sandwich

Spread a layer of yogurt sauce on the base of the sandwich, then align the slices of grilled green tomatoes, the chicken cut into slices with oblique cuts, the grilled zucchini and a little more yogurt sauce. Close the sandwich with the top of bread and serve.
