These Mediterranean sandwiches are an explosion of summer flavors! Perfect for a quick lunch or an outdoor picnic, they combine the simplicity of bread with the richness of Mediterranean ingredients. Chicken breast, grilled eggplant and smoked cheese create an irresistible combination, enriched by the freshness of pico de gallo. The preparation is simple and quick, ideal for those who have little time but do not want to give up taste. I love them because they are easy to customize: you can add other ingredients such as dried tomatoes or pesto for an extra touch. A delicious idea for a complete and satisfying meal!

Ingredients (12 ingredients)

  • Sandwiches
  • Smoked cheese
  • Chicken breast
  • Eggplant
  • Black olives
  • Pico de gallo
  • 200 g Diced tomatoes
  • 50 g Onion
  • 1 piece Green chili pepper
  • 0.5 piece Lime (juice)
  • to taste Salt
  • Fresh coriander

Preparation (6 steps)

Bread preparation

Cut the sandwiches in half and transfer each half to a hot plate. This step does not require the use of the Thermomix.

Filling the sandwiches

When the bread is hot, start filling it with slices of smoked cheese, grilled eggplant in oil and black olives. This step does not require the use of the Thermomix.

Cooking the chicken breast

Slice the chicken breast and cook it in a pan until golden brown. This step does not require the use of the Thermomix.

Sandwich assembly

Arrange the chicken breast in the sandwich, on top of the other ingredients. Empty the lid of the sandwich from the crumb, creating a hollow. Fill the hollow with the pico de gallo and close the sandwich. This step does not require the use of the Thermomix.

Final heating

Put everything back on the plate and let the smoked cheese melt and the other ingredients heat up. This step does not require the use of the Thermomix.

Pico de gallo preparation

To prepare the pico de gallo, put 200g of diced tomatoes, 50g of onion, 1 green chili pepper, the juice of half a lime, a pinch of salt and a few leaves of fresh coriander in the bowl. Chop for 5 Sec./Speed 5.
