Description

I love preparing this creamy pappardelle dish with mixed mushrooms! It is an explosion of autumnal flavors, perfect for a comforting and quick dinner. The eryngii and button mushrooms combine perfectly, creating a rich and enveloping sauce. The preparation is very simple and with the Thermomix® it becomes even faster. In less than 40 minutes, you will bring to the table a first course that will conquer everyone. A tip? Add a sprinkling of grated Parmesan cheese for an extra touch of flavor! Ideal for a dinner with friends or a Sunday lunch with the family.

Ingredients (8 ingredients)

  • 320 g fresh pappardelle
  • 150 g eryngii
  • 150 g button mushrooms
  • 1 clove garlic
  • 100 ml white wine
  • parsley
  • olive oil
  • fine salt

Preparation of the mushrooms

Remove the stem and peel the button mushrooms. Cut into thin slices and set aside in a bowl.

Cutting the eryngii

Cut the eryngii into slices as well and add them to the button mushrooms in the bowl.

Chop the garlic

Cooking the mushrooms

Add the chopped mushrooms to the bowl, add salt to taste and cook for 10 Min./100°C/Stufe 1.

Deglaze with white wine

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 100 ml of white wine to the bowl and cook for another 10 Min./100°C/Stufe 1 without a measuring cup.

Cooking the pasta

Meanwhile, cook the fresh pappardelle in abundant salted water following the instructions on the package.

Drain and stir the pasta

Drain the pappardelle and pour them into the bowl with the mushroom sauce. Add a ladle of pasta cooking water, chopped parsley to taste and stir for 2 Min./90°C/Linkslauf Stufe 1.
