Description

I love preparing this pasta with zucchini and cured pork cheek! It is a simple dish but full of flavor, perfect for a quick dinner or a family lunch. The crispy cured pork cheek goes perfectly with the sweetness of the zucchini, creating a delicious contrast. The preparation is really quick, especially if you use fresh seasonal zucchini. A tip? Don't skimp on the freshly ground black pepper, it enhances the taste even more! If you prefer, you can replace the cured pork cheek with smoked bacon, but the cured pork cheek gives a more intense and authentic flavor. Enjoy your meal!

Ingredients (6 ingredients)

  • 360 g pasta
  • 500 g zucchini
  • 100 g bacon in stick
  • olive oil
  • pepper
  • fine salt

Preparation (8 steps)

Preparation of the zucchini

Wash and cut the zucchini in half, then into thin slices. Set aside.

Brown the cured pork cheek

5 min/248°F/Speed 1 120

Cut the cured pork cheek into strips. Put the cured pork cheek in the bowl and brown for 5 Min./120°C/Stufe 1 without a measuring cup.

Drain the cured pork cheek

Drain the cured pork cheek on absorbent paper and set aside.

Cook the zucchini

Thermomix® Setting
6 min/248°F/Speed 1 120

Pour a drizzle of olive oil into the bowl. Add the zucchini, salt and pepper. Cook for 6 Min./120°C/Stufe 1.

Cook the pasta

Meanwhile, cook the pasta in abundant salted water for the time indicated on the package minus 3-4 minutes.

Stir the pasta

Thermomix® Setting
2 min/212°F/Speed 2 100

Drain the pasta and pour it into the bowl with the zucchini. Add two ladles of pasta cooking water. Stir for 2 Min./100°C/Stufe 2.

Add the cured pork cheek

Thermomix® Setting
10 sec/Speed 1/Linkslauf Reverse

Add most of the crispy cured pork cheek (keeping some aside for decoration) and mix gently for 10 Sek./Stufe 1/Linkslauf.

Serve

Serve the pasta hot, garnishing with the crispy cured pork cheek set aside and a grind of fresh pepper.
