This traditional dish from Apulia, Pasta e Ceci, is a true delight! The combination of homemade pasta, creamy chickpeas, and aromatic spices makes it an unforgettable experience. Ingredients (13 ingredients)

  • 150 g flour 00
  • 150 g re-milled durum wheat semolina flour
  • 165 g water
  • 1 tbsp extra virgin olive oil
  • 150 g pre-cooked chickpeas
  • 2 piece small white onions
  • 2 spicchi whole garlic cloves
  • extra virgin olive oil
  • bay leaves
  • 350 g vegetable broth
  • chili pepper
  • seed oil for frying
  • fine salt

Preparation (7 steps)

Prepare onions and garlic

Thermomix® Setting

Peel and halve 2 small onions and put them in the mixing bowl. Chop for 3 sec./speed 5. Add 2 garlic cloves and chop for 3 sec./speed 7. Use the spatula to scrape everything down from the edge.

Sauté onions and garlic

Add a dash of extra virgin olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Add chickpeas and spices

20 min/212°F/Speed 1 100

Add 150 g pre-cooked chickpeas, a few bay leaves, a pinch of chili pepper and 350 g vegetable broth to the mixing bowl. Cook for 20 min./100°C/speed 1.

Prepare pasta

Thermomix® Setting
3 min/Kneading speed

Add 150 g flour 00, 150 g durum wheat semolina and 165 g water at room temperature to the mixing bowl. Knead for 3 min./kneading stage.

Shape pasta

Remove the dough from the mixing bowl and form into a ball. Roll out thinly on a floured work surface and cut into irregular pieces. Fry some of the pasta in plenty of vegetable oil until golden brown. Set the rest of the pasta aside.

Cook pasta

5 min/212°F/Speed 1 100

Add the remaining pasta to the mixing bowl with the chickpeas and cook for another 5 min./100°C/speed 1 until the pasta is cooked. Season with salt.

Serve

Arrange the Pasta e Ceci in deep plates and garnish with the fried pasta. Serve with a drizzle of extra virgin olive oil.
