Description

This dish is a great alternative to classic carbonara! Instead of bacon, I use fresh mushrooms, which end up in a creamy egg-cheese sauce. The preparation is super easy and quick, perfect for a delicious lunch or dinner during the week. I especially like to make pasta with mushroom-egg sauce in the fall when there are fresh mushrooms. If you like, you can also use other types of mushrooms. An absolute favorite recipe that is always well received by us!

Ingredients (9 ingredients)

  • 200 g Tagliatelle
  • 200 g Mushrooms, brown
  • 2 piece Egg yolk
  • 2 tbsp Parmesan, grated
  • 2 tbsp Pecorino, grated
  • 1 tbsp Oil
  • 1 tsp Spice paste
  • 6 Stiel/e Parsley, smooth chopped
  • 1 tbsp Butter

Preparation (9 steps)

Prepare mushrooms

Clean 200 g brown mushrooms, halve them depending on their size and cut them into slices. Then set aside.

Grate cheese

Thermomix® Setting
10 sec/Speed 8

Put 2 tbsp Parmesan, grated and 2 tbsp Pecorino, grated into the mixing bowl and chop for 10 sec./level 8. Transfer and set aside.

Mix eggs and cheese

In a sufficiently large bowl, mix 2 egg yolks with the grated Parmesan and Pecorino and season lightly with pepper. Set aside.

Cook noodles

Cook 200 g tagliatelle or other long noodles in a separate pot with plenty of salted water according to the package instructions. In the meantime, continue with the next step.

Fry mushrooms

Put 1 tbsp oil in the mixing bowl, add the prepared mushrooms and sauté for 5 min./120°C/level 1.

Season mushrooms

Thermomix® Setting
1 min/212°F/Gentle stir speed 100

Add 1 tsp spice paste and 1 tbsp butter to the mushrooms in the mixing bowl and stir in for 1 min./100°C/gentle stirring level.

Add parsley

Thermomix® Setting
10 sec/Speed 2 Linkslauf Reverse

Add 6 stalk smooth parsley, chopped, to the mixing bowl and stir in for 10 sec./level 2 reverse.

Mix pasta with sauce

Fish the cooked noodles out of the boiling pasta water with a spaghetti spoon or similar and add them dripping wet to the egg-cheese mixture in the bowl. Add the mushrooms from the mixing bowl and mix everything well.

Serve

Arrange the pasta on preheated plates and serve sprinkled with plenty of freshly ground pepper.
