Ingredients (19 ingredients)

  • 2 Stück Juice oranges
  • 350 g Juice oranges
  • 21 ml Water
  • 0.5 TL Salt
  • 1 EL Sugar
  • Cinnamon
  • Orange puree
  • 6 Stück Eggs
  • 250 g Sugar
  • 250 g Almonds, blanched, ground
  • 50 g Potato starch
  • 0.5 Pck. Baking powder
  • Cinnamon
  • Soft butter
  • Flaked almonds
  • 400 g Dark chocolate couverture
  • Dried orange slices
  • Caramelized almonds
  • Candied orange peel pieces

Preparation (10 steps)

Prepare oranges

Put 21 water, 1/2 tsp salt and 1 tbsp sugar into the mixing bowl and add some cinnamon if necessary. Bring to the boil for 10 min./100°C/speed 1.

Cook oranges

Put 2-3 juice oranges (330-350g) with peel into the mixing bowl and cook until soft for 2 hours/90°C/speed 1.

Puree oranges

Let the oranges cool down a little, remove the seeds and puree in the mixing bowl for 30 sec./speed 8.

Beat eggs and sugar

Put 6 eggs and 250g sugar into the mixing bowl and beat with the butterfly for 5-10 min./speed 3.5 until thick and foamy.

Stir in orange puree

Thermomix® Setting

Add the orange puree and stir in for 10 sec./speed 2. Remove butterfly.

Mix and fold in dry ingredients

Mix 250g almonds, 1/2 pack baking powder and 50g potato starch in a separate bowl. Add the dry ingredients to the mixing bowl and carefully fold in with the spatula.

Bake cake

Pour the batter into a springform pan (26 cm diameter) greased with butter and sprinkled with flaked almonds and bake in a preheated oven at 160 degrees top/bottom heat for about 40-55 minutes. Check with a skewer to see if the cake is done.

Let cake cool down

Remove the cake from the oven and let it cool in the pan, preferably overnight.

Temper couverture

Temper 400g dark chocolate couverture over a water bath.

Decorate cake

Coat the cooled cake with the tempered couverture or icing and decorate to taste with dried orange slices, almonds and candied orange peel pieces.
