Description

This carrot cake is a moist and aromatic cake decorated with cream cheese frosting. The main ingredients are carrots, almonds and cinnamon, which give the cake a special flavor. Preparation takes about 75 minutes and is perfect for festive occasions or as a dessert.

Ingredients (12 ingredients)

  • 375 g Carrot(s), grated
  • 250 g Flour
  • 2 TL Baking powder
  • 250 g Sugar
  • 1 EL Cinnamon powder
  • 250 ml Oil, neutral
  • 4 Stück Egg(s)
  • 200 g Almond(s), ground
  • 300 g Cream cheese
  • 100 g Icing sugar
  • 1 Pck. Vanilla sugar
  • 1 Spritzer Lemon juice

Preparation (7 steps)

Mix eggs, sugar, oil and cinnamon

Add eggs, sugar, oil and cinnamon to the mixing bowl and mix for 3 min./speed 4.

Add carrots and almonds

Add 375 g grated carrots and 200 g ground almonds to the mixing bowl and stir in for 1 min./speed 3.

Mix flour and baking powder and stir in

Mix 250 g flour and 2 tsp baking powder, add to the mixing bowl and stir in for 1 min./speed 3.

Bake dough

Pour the dough into a greased 26 springform pan or bundt cake pan and bake in a preheated oven at 180 °C top/bottom heat or 160°C convection oven for 40-50 minutes. Do a stick test.

Prepare frosting

Add 300 g cream cheese and 1 splash of lemon juice to the mixing bowl and mix for 30 sec./speed 3.

Sprinkle in icing sugar and vanilla sugar

Add 100 g icing sugar and 1 pack. Vanilla sugar into the mixing bowl and stir in for 20 sec./speed 3.

Apply frosting

Let the cake cool after baking and apply the frosting all around with the palette knife.
