Description

This cheddar and onion pie is a comforting and flavourful dish, perfect for a hearty lunch or a savoury addition to a festive buffet. I've been making this pie for years, and it's always a hit! The combination of sweet caramelized onions, sharp cheddar, and sage & onion stuffing creates a delicious and satisfying filling. The pastry is crisp and golden, providing the perfect contrast to the soft interior. It's best served warm, but it's also delicious cold, making it ideal for picnics or lunchboxes. This pie is a great way to use up leftover cheese and is sure to be a crowd-pleaser.

Ingredients (6 ingredients)

  • 500 g plain flour
  • 250 g cold butter
  • 3 piece onions
  • 170 g sage & onion stuffing mix
  • 3 piece eggs
  • 400 g mature cheddar

Prepare the pastry

Thermomix® Setting
20 sec/Speed 4

Place 500g plain flour and a pinch of salt into the Thermomix bowl. Add 250g cold butter, cut into cubes, and mix for 20 Sec./Stufe 4 until the mixture resembles fine breadcrumbs. With the Thermomix running at Stufe 2, gradually add 4 tbsp water, then continue to add more, 1 tbsp at a time, until the mixture just comes together into a dough. Remove the dough from the Thermomix bowl, shape into a disc, wrap in cling film, and chill in the fridge for at least 30 minutes.

Cook the onions

Thermomix® Setting
15 min/212°F/Speed 1 100

Place 3 onions, quartered, into the Thermomix bowl. Add just enough water to cover them. Cook for 15 Min./100°C/Stufe 1. Check if the onions have softened and the water has evaporated. If not, cook for a further 5 Min./100°C/Stufe 1. Tip the cooked onions onto a plate and leave to cool.

Prepare the stuffing

Make up the 170g sage & onion stuffing mix following the pack instructions. Set aside.

Assemble the pie

Preheat the oven to 200C/180C fan/gas 6 with a baking sheet inside. Cut off a third of the chilled pastry and set aside in the fridge. Roll out the remaining two-thirds of pastry on a lightly floured surface into a large circle. Use the pastry to line a 26cm wide, 6cm deep pie dish and press it into the base and up the side. Trim the edges and use the offcuts to patch any tears or cracks, then return to the fridge.

Mix the filling

Lightly beat 2 eggs. Add the cooked and cooled onions and 400g mature cheddar, grated, to the Thermomix bowl. Mix for 10 Sek./Stufe 3. Season well with black pepper and a pinch of salt.

Layer the pie

Spoon the stuffing into the pastry case and gently press it into the base and up the side. Tip the cheese and onion mixture into the stuffing-lined pastry case. Beat the remaining egg and brush a little over the exposed pastry rim.

Top and seal the pie

Roll out the remaining pastry. Lay this on top of the pie, sealing the edge with your fingertips. Trim any excess, then crimp the edge or press with a fork to seal. Poke a small hole in the middle to allow steam to escape, then brush the top with the remaining beaten egg.

Bake the pie

Put the pie on the hot baking sheet and bake for 40-45 mins until golden brown all over. Leave to cool for 10 mins before slicing and serving, or leave to cool completely and serve cold.
