Description

These potatoes with creamy garlic mayonnaise are a classic of Spanish cuisine, perfect for tapas in summer. The key is in the garlic mayonnaise, which should be light so that it permeates the potatoes well. I always prepare them like this, and they never fail! They are ideal to share with friends or family on a sunny afternoon. The combination of boiled potato with garlic mayonnaise and fresh parsley is simply delicious. Also, it is a very economical and easy to prepare recipe, so there is no excuse not to try it! A little trick: if you want a more intense touch, add a little more garlic to the garlic mayonnaise. You will love them!

Ingredients (7 ingredients)

  • 2 piece Potato
  • 1 piece Egg
  • 1 clove Garlic
  • 150 ml Sunflower oil
  • 1 bunch Parsley
  • 1 pinch Salt
  • 1 unas gotas Lemon juice

Preparation (6 steps)

Cooked potatoes

Thermomix® Setting
20 min/212°F/Speed 1 100

Wash the potatoes well without peeling. Place the potatoes in the Thermomix bowl. Add water to cover the potatoes and a pinch of salt. Program 20 Min./100°C/Stufe 1.

Chopped potatoes

Once the potatoes are cooked, drain the water. Peel the potatoes and cut them into irregular pieces. Place the potato pieces in a bowl and let cool.

Chopped garlic

Thermomix® Setting
3 Seg./Speed 7

Insert the peeled garlic clove into the Thermomix bowl and chop 3 Seg./Stufe 7.

Garlic mayonnaise

Thermomix® Setting
4 min/Speed 5

Add the egg, sunflower oil, a few drops of lemon juice and salt to the Thermomix bowl. Program 4 Min./Stufe 5. If the mayonnaise is too thick, add a little more sunflower oil and mix for a few more seconds.

Chopped parsley

Thermomix® Setting
3 Seg./Speed 7

Chop the parsley in the Thermomix for 3 Seg./Stufe 7.

Mix and chill

Pour the garlic mayonnaise over the chopped potatoes. Add the chopped parsley and mix gently with enveloping movements. Reserve a little parsley to sprinkle on top. Cover the bowl with transparent film and refrigerate for at least 30 minutes before serving.
