Description

These potatoes to the Riojana style are a traditional Spanish dish that comforts the soul, perfect for the cooler days! The combination of tender potatoes, tasty chorizo and an aromatic sauté is simply delicious. I have been preparing them for a long time and they are always a success at home. The recipe is very simple and is done almost alone, ideal for an uncomplicated family meal. The touch of sweet and spicy paprika gives it a special flavor, although you can omit it if you prefer a milder dish. Enjoy this classic!

Ingredients (11 ingredients)

  • 4 piece potatoes
  • 30 gramos chorizo
  • 2 dientes garlic
  • 1 piece onion
  • 1 piece red pepper
  • 1 pinch sweet paprika
  • 1 pinch spicy paprika
  • 1 hoja bay leaf
  • 600 mililitros chicken broth
  • 1 pinch salt
  • 1 chorro oil

Preparation (6 steps)

Preparation of the vegetables

Peel and cut the potatoes into medium cubes. Finely chop the onion, red pepper and garlic cloves. Cut the chorizo into slices.

Sauté the onion and garlic

Add the onion to the glass and chop 3 Sec./Level 5. Add a splash of oil and sauté 3 Min./120°C/Level 1.

Add the pepper and chorizo

Add the chopped red pepper and garlic to the glass and sauté 2 Min./120°C/Level 1. Add the sliced chorizo and stir 2 Min./120°C/Level 1/Left rotation.

Incorporate the potatoes and spices

Thermomix® Setting

Add the diced potatoes, bay leaf, salt and sweet and spicy paprika (optional) to the glass. Mix well 1 Min./Level 1/Left rotation.

Cook the potatoes

Thermomix® Setting
25 min/212°F/Speed 1/Linkslauf 100 Reverse

Pour the chicken broth into the glass. Program 25 Min./100°C/Level 1/Left rotation. If necessary, add a little more broth during cooking.
