Description

Broken potatoes with ham are a simple but delicious dish, perfect for a quick meal or an informal dinner. This dish, originating from Spain, combines crispy fried potatoes with fried eggs and cured ham, creating an explosion of flavors and textures. I prepare it often because it is very easy to make and always succeeds. In addition, it can be adapted to everyone's tastes, adding other ingredients such as peppers or onion. Ingredients (5 ingredients)

  • 1 kilogramo potatoes
  • 4 piece eggs
  • 8 lonchas cured ham
  • 1 container olive oil
  • 1 pinch salt

Potato preparation

We peel and cut 1 kilogram of potatoes into medium-sized cubes. We place them in a bowl with cold water so that they release the starch.

Fry the potatoes

We drain the potatoes well and dry them with kitchen paper. We pour 1 glass of olive oil into the Thermomix bowl and program 15 Min./Varoma/Turn to the left/Spoon speed. We add the potatoes through the lid and fry until they are golden and crispy.

Remove the potatoes

We remove the potatoes from the Thermomix bowl with a slotted spoon and place them on a plate with absorbent paper to remove excess oil. We reserve.

Cut the ham

We cut 8 slices of cured ham into strips and add them to the plate with the fried potatoes. We mix well.

Fry the eggs

5 min/248°F/Velocidad 1 120

Without washing the bowl, we add a little of the oil for frying the potatoes (approximately 2 tablespoons). We program 5 Min./120°C/Speed 1. We add 4 eggs to the bowl and fry until they are to our liking.

Serve

We place the fried eggs on top of the potatoes and ham. With the help of a knife, we break the eggs and mix everything. We season with a pinch of salt and serve immediately.
