Description

This creamy pasta with pumpkin flowers and zucchini is a delicious summer dish that is easy to prepare with the Thermomix®. The sweetness of the pumpkin flowers goes perfectly with the delicacy of the zucchini, creating a creamy and enveloping sauce. I love preparing it when I have guests for lunch, because it is always a success! The preparation is quick and the result is a dish full of flavor and color. An excellent alternative for a light and tasty lunch, also perfect for vegetarians. Serve it with a generous sprinkling of grated cheese for an extra touch of flavor.

Ingredients (8 ingredients)

  • 320 g pasta
  • 2 piece medium zucchini
  • 10 piece pumpkin flowers
  • 2 clove garlic
  • 0.5 bicchiere water
  • olive oil
  • fine salt
  • grated cheese

Preparation (10 steps)

Prepare zucchini

The ends of the zucchini are removed and cut into thick slices lengthwise, then into strips and finally into cubes. Set aside.

Prepare pumpkin flowers

The pumpkin flowers are cleaned by removing the stem and internal pistil. Cut them into not too thin strips. Set aside.

Chop garlic

2 cloves of garlic in the bowl and chop: 3 Sec./Level 7.

Sauté garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add olive oil to the bowl and sauté the garlic: 3 Min./120°C/Level 1.

Cook zucchini and pumpkin flowers

Thermomix® Setting
15 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the cubed zucchini, fine salt and pumpkin flowers to the bowl. Add ½ glass of water and cook: 15 Min./100°C/Level 1/Reverse.

Remove garlic and blend part of the sauce

Remove the garlic from the bowl. Take about two thirds of the sauce and put it in a bowl. Blend with an immersion blender until you get a smooth and homogeneous cream. (This step is performed outside the Thermomix).

Mix creamy sauce

Thermomix® Setting
10 sec/Speed 2/Linkslauf Reverse

Put the cream obtained back into the bowl with the rest of the zucchini and mix: 10 Sec./Level 2/Reverse.

Cook pasta

Cook the pasta in boiling salted water according to package directions. (This step is performed outside the Thermomix).

Mix pasta with sauce

Thermomix® Setting
20 sec/Speed 3/Linkslauf Reverse

Drain the pasta al dente directly into the bowl with the sauce and mix vigorously: 20 Sec./Level 3/Reverse, adding a ladle of cooking water if necessary.

Serve

Plate with a generous sprinkling of grated cheese and serve the creamy pumpkin flower and zucchini pasta immediately.
