Description

This recipe for ribbon noodles with lemon-herb pesto is an absolute hit! I especially like to make it in spring and summer when the lemons are really juicy. The pesto is super quick to prepare in the Thermomix® and tastes incredibly fresh. The roasted pine nuts give the dish an extra crunch. Perfect as a light lunch or quick dinner. If you like, you can add some freshly grated Parmesan cheese on top. A real treat!

Ingredients (8 ingredients)

  • 500 g Ribbon noodles
  • 2 clove Garlic
  • 70 g Grated Parmesan
  • 100 g Pine nuts
  • 90 ml Olive oil
  • 1 pinch Pepper
  • 3 Zweig Thyme
  • 50 g Mini vine tomatoes

Preparation (8 steps)

Chop garlic

Thermomix® Setting
3 sec/Speed 7

Add 2 cloves of garlic to the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare pesto

Thermomix® Setting
20 sec/Speed 8

Add 70 g grated Parmesan, half of the 100 g pine nuts (i.e. 50g), 90 ml olive oil, the grated zest of 3 washed lemons, 1 pinch of pepper and 1 pinch of salt to the mixing bowl and puree for 20 sec./speed 8. Scrape down with the spatula and repeat if necessary.

Add thyme

Thermomix® Setting
5 sec/Speed 3 Linkslauf Reverse

Wash 3 sprigs of thyme, pluck from the stem and add to the mixing bowl. Stir in for 5 sec./speed 3 reverse.

Roast pine nuts

Roast the remaining 50 g of pine nuts in a pan without oil until golden brown and set aside.

Toss tomatoes

Wash 50 g of mini vine tomatoes, halve them. Heat 1 tbsp olive oil in a pan and briefly toss the tomatoes in it.

Cook noodles

Cook 500 g ribbon noodles in sufficient salted water according to the package instructions until al dente and drain.

Mix noodles with pesto

Mix the cooked ribbon noodles with the lemon pesto and fold in the roasted pine nuts.

Arrange

Arrange the ribbon noodles with pesto on plates and top with the sautéed tomatoes. Serve immediately.
