Description

These pear brittle cupcakes are a poem! I especially like to bake them in the autumn, when the pears are nice and ripe. The curd in the dough makes them wonderfully juicy and the brittle provides a great crunch. They are perfect for a cozy Sunday brunch or as a sweet surprise for a birthday. If you like, you can add some cinnamon to the dough. The preparation is a bit more complex, but the result is worth it! An absolute must for all cake lovers.

Ingredients (11 ingredients)

  • 3 piece ripe small pears
  • 3 tbsp Lemon juice
  • 1 piece Egg (size M)
  • 100 g Sugar
  • 1 Pck. Vanilla sugar
  • 250 g Low-fat curd cheese
  • 100 ml Oil
  • 200 g Flour
  • 0.5 Pck. Baking powder
  • 4 tbsp Hazelnut brittle
  • 4 tbsp Apricot jam

Preparation (8 steps)

Prepare pears

Peel, halve and core the pears. Cut the halves lengthways on the curved side, but do not cut through. Halve the halves crosswise and sprinkle with lemon juice. Set aside.

Mix egg, sugar and vanilla sugar

Put egg, sugar and vanilla sugar in the mixing bowl and stir for 2 min./level 4 until creamy.

Stir in curd cheese

Add low-fat curd cheese and stir in for 20 sec./level 3.

Stir in oil

30 sec/keine/Speed 3

Gradually add oil through the lid opening and stir in for 30 sec./level 3.

Mix flour and baking powder and stir in

Mix flour and baking powder, add to the mixing bowl and stir for 20 sec./level 4 to a smooth dough.

Fold in brittle

Thermomix® Setting

Add 3 tablespoons of hazelnut brittle and stir in for 10 sec./reverse/level 2.

Fill and bake muffins

Fill 1 heaped tablespoon of dough into the paper-lined recesses of a muffin tin. Place 1 quarter of pear, with the curved side upwards, into the dough and press down lightly. Bake in the preheated oven (electric oven: 180 °C/convection oven: 160 °C) for approx. 30 minutes.

Heat jam and brush muffins

2 min/122°F/Speed 2 50

Put apricot jam in the mixing bowl and heat for 2 min./50°C/level 2. Brush the muffins with the jam while still hot and sprinkle with the remaining brittle.
