Description

Delicious and healthy fiber-rich rolls with linseed, perfect for breakfast or as a snack.

Ingredients (14 ingredients)

  • 500 ml Buttermilk
  • 200 ml Hot water
  • 2 Stück Eggs size L
  • 2 EL Olive oil
  • 100 g Golden linseed flour
  • 50 g Potato fibers
  • 50 g Oat fibers
  • 50 g Bamboo fibers
  • 30 g Psyllium husks
  • 1 P Dry yeast (8-10g)
  • 1 P Baking powder (15g)
  • 10 g Salt
  • 1 TL Sugar
  • Grains for sprinkling

Preparation (6 steps)

Mix liquid ingredients

Add 500 ml buttermilk, 200 ml hot water, yeast (1 packet of dry yeast (8-10g)) and sugar (1 tsp) to the mixing bowl and stir for 2 min./37°C/speed 2.

Mix dry ingredients

Add 100g golden linseed flour, 50g potato fibers, 50g oat fibers, 50g bamboo fibers, 30g psyllium husks, 15g baking powder and 10g salt and mix for 20 sec./speed 4.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Add 2 eggs (size L) and 2 tbsp olive oil and knead for 2 min./kneading stage until a well-formed dough is formed.

Let the dough rest

Shape the dough into a ball, cover and let rest at 40°C for 15 minutes.

Shape rolls

Knead the dough again and divide into 8 portions. Shape into balls and place on baking paper on the baking rack. Sprinkle with grains and cut.

Bake rolls

Bake in a preheated oven at 220°C (bread baking setting) for 7 minutes. Pour a cup of water into the oven when sliding in. Now turn the temperature down to 160°C and bake for 30 minutes.
