Description

This Thermomix® recipe for duck breast on orange lamb's lettuce combines duck breast fillets, fresh oranges and lamb's lettuce to create a Mediterranean dish. Refined with olive oil, honey and mustard, it creates a harmonious taste experience. The preparation time is 45 minutes for 4 servings. Ideal as a festive appetizer or light main course, especially suitable for the autumn and winter seasons.

Ingredients (10 ingredients)

  • 4 Stück Duck breast fillets
  • 2 Stück Organic oranges
  • 4 EL Olive oil
  • 1 TL Honey
  • 2 TL Mustard
  • 150 g Lamb's lettuce
  • 100 g Walnut kernels
  • 1 TL Raw cane sugar
  • nach Geschmack Salt
  • nach Geschmack Red pepper

Preparation (5 steps)

Prepare orange zest

Zest the zest from the 2 organic oranges with a zester and set aside. Peel the oranges and cut out the fillets, collecting the juice.

Prepare vinaigrette

Add 4 tbsp olive oil, 1 tsp honey, 2 tsp mustard and the collected orange juice to the mixing bowl and mix for 20 sec/speed 3.

Marinate lamb's lettuce

Place 150 g lamb's lettuce in a bowl and mix with the vinaigrette.

Caramelize walnuts

Add 1 tsp water and 1 tsp raw cane sugar to the mixing bowl and heat for 3 min/120°C/speed 1.

Add the prepared orange zest and steam for 1 min/100°C/reverse rotation speed 1.
