Description

This recipe combines tender pheasant breast with heartily fried oyster mushrooms on a fresh romaine lettuce. The special touch is the creamy dressing, prepared in the Thermomix®. It combines garlic, anchovy, Parmesan, and a hint of lemon for a flavor explosion. The preparation is a bit more involved, but the result is a festive dish perfect as an appetizer or a light main course. Especially in autumn, when mushroom season begins, this salad is simply delicious. A real treat for special occasions!

Ingredients (11 ingredients)

  • 2 Stück Pheasant breasts
  • 2 Stück Romaine hearts
  • 150 Gramm Oyster mushrooms
  • 2 Teelöffel Dijon mustard
  • 30 Gramm Parmesan
  • 1 Stück Egg yolk
  • 100 Milliliter Olive oil
  • 4 Schuss Worcestershire sauce
  • Lemon
  • 2 Zehen Garlic
  • 1 Stück Anchovy

Preparation (6 steps)

Chop garlic and anchovy

Place 2 cloves of garlic and 1 anchovy in the mixing bowl and chop for 5 sec./speed 8. Scrape down the sides with the spatula.

Prepare dressing

Thermomix® Setting
20 sec/Speed 3

Add the chopped garlic-anchovy paste, 30 g grated Parmesan, 1 egg yolk, and 2 tsp Dijon mustard to the mixing bowl. Mix for 20 sec./speed 3. While mixing, slowly pour 100 ml olive oil through the lid opening.

Refine dressing

10 sec/Speed 2

Add 4 dashes of Worcestershire sauce and the juice of one lemon and mix for 10 sec./speed 2.

Prepare salad

Wash 2 romaine hearts, spin dry, and cut into bite-sized pieces. Place the cut lettuce in a bowl and mix with the dressing.

Sear pheasant breast and mushrooms

Salt 2 pheasant breasts and sear in a hot pan on both sides for 2-3 minutes. Add 150 g oyster mushrooms and sear as well.

Arrange

Remove the meat from the pan and let it rest for 5 minutes. Then slice and arrange on the salad together with the mushrooms. Serve immediately.
