Description

This pumpkin pizza with goat cheese and sobrasada is an autumnal delight that I prepare often. The combination of the sweetness of the roasted pumpkin with the intense flavour of the goat cheese and the spicy touch of the sobrasada is simply irresistible. The shortcrust pastry base gives it a crunchy touch that contrasts perfectly with the creaminess of the filling. It is perfect for an informal dinner with friends or as a starter in a special meal. Go ahead and try it, you will love it! Also, it is a very versatile recipe, you can add or remove ingredients to your liking. I sometimes put some chopped nuts to give it an extra crunchy touch.

Ingredients (12 ingredients)

  • 1 piece Round shortcrust pastry
  • 250 g Packaged pumpkin without fresh or frozen rind
  • 0.5 piece Fresh or frozen onion
  • 1 piece Roll of normal or lactose-free goat cheese
  • 1 poco Sobrasada or spreadable
  • 1 poco Mozzarella or lactose-free grated cheese
  • 1 poco Olive oil
  • 1 poco salt
  • 1 poco pepper
  • 1 poco Thyme
  • 1 poco Oregano
  • 1 poco Parsley

Preparation (8 steps)

Preheat the oven

Preheat the oven to 200°C with heat up and down for 15 minutes. While the oven is heating up, prepare the ingredients.

Chop the pumpkin and onion

Chop 250 g of pumpkin into small pieces and 1/2 onion. Place the pumpkin and chopped onion in a microwave-safe container. Add a little olive oil, salt and pepper.

Cook the pumpkin and onion in the microwave

Cook the pumpkin and onion in the microwave covered for 15 minutes or until tender. Check for doneness with a fork.

Chop the pumpkin and onion

Pour the cooked pumpkin and onion into the Thermomix bowl. Chop for 30 seconds at speed 8. If the mixture is too thick, add a little milk and mix for 10 seconds at speed 4. Taste and adjust salt if necessary.

Spread the shortcrust pastry

Spread 1 round shortcrust pastry in its paper on the baking tray. Raise the edges a little to prevent the filling from spilling.

Cover the dough with the filling

Cover the shortcrust pastry with a layer of pumpkin puree. Distribute slices of 1 roll of goat cheese and piles of sobrasada to taste on top of the pumpkin. Sprinkle mozzarella or grated cheese on top and a little chopped parsley.

Bake the pizza

Bake the pizza with heat up and down for about 15 minutes or until the cheese is melted and the dough is golden.

Serve

Once out of the oven, you can add fresh thyme and oregano (optional). Cut the pizza into eight portions and serve hot.
