About this recipe

This Strawberry Dessert Pizza is a recipe that evolved from a desire to bring something a little different to summer potlucks. I always found myself gravitating towards fruit pizzas at gatherings, but I wanted to create a version that was easier to transport and assemble, and that really highlighted the fresh flavors of summer berries. The Thermomix® makes several steps incredibly simple, especially the pudding and syrup components. The foundation of this dessert is the sugar cookie crust. Using pre-made dough saves time and ensures a consistent, slightly chewy texture. It provides a sweet, buttery base that contrasts beautifully with the creamy and fruity toppings. The white chocolate pudding is the next layer, adding a smooth, rich sweetness. The instant pudding mix is incredibly convenient, and the Thermomix® blends it perfectly with the milk, eliminating any lumps. The cream cheese adds a tangy counterpoint to the sweetness of the pudding, creating a balanced and flavorful base. The Thermomix® is particularly useful for the pudding and cream cheese layers. The precise speed control allows you to achieve a perfectly smooth consistency without overmixing. When making the strawberry syrup, the Thermomix® ensures even heating and consistent stirring, preventing the cornstarch from clumping and resulting in a glossy, thickened syrup. The margarita mix might seem like an unusual ingredient, but its subtle citrus notes enhance the strawberry flavor and add a touch of complexity. If you don't have margarita mix on hand, you can substitute it with a mixture of lime juice and orange juice. For variations, you could easily adapt this recipe to be vegetarian by ensuring that the whipped topping is vegetarian-friendly (some contain gelatin). A vegan version would require more significant substitutions. You could try using a vegan sugar cookie dough, a plant-based milk alternative for the pudding, and a vegan cream cheese substitute. For the whipped topping, there are several plant-based options available. Feel free to experiment with other fruits as well. Blueberries, raspberries, or sliced kiwi would all be delicious additions or substitutions for the strawberries. A sprinkle of chopped nuts, like almonds or pecans, would also add a nice textural element. To serve, slice the pizza into wedges and arrange them on a platter. A dollop of extra whipped cream or a sprinkle of powdered sugar would make a lovely presentation. This dessert is best enjoyed chilled, as the flavors meld together and the crust firms up slightly. For storage, keep the assembled pizza in the refrigerator. It's best consumed within 24-48 hours, as the crust can become soggy over time. You can also prepare the individual components ahead of time. The cookie crust can be baked a day in advance and stored at room temperature. The pudding and cream cheese mixture can be made and refrigerated for up to 24 hours. The strawberry syrup can also be prepared in advance and stored in the refrigerator. Assemble the pizza just before serving for the best results.
