Description

This creamy rice dish with Parmesan is a real classic and super easy to prepare in the Thermomix®. I really like to make it when I need something quick, but still want something special on the table. The rice becomes wonderfully creamy by gradually adding hot vegetable broth, and the grated Parmesan provides the typical, spicy taste. Perfect as a main course or side dish. A great vegetarian dish that is guaranteed to please everyone! Vary it with fresh herbs or mushrooms – there are no limits to your creativity!

Ingredients (5 ingredients)

  • 400 g Rice
  • 2 l Vegetable broth
  • 3 tbsp Olive oil
  • 1 piece Onion(s)
  • 80 g Parmesan

Preparation (5 steps)

Chop onion

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté onion

Add 3 tbsp olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sauté rice

Add 400 g rice to the mixing bowl and sauté for 3 min./120°C/speed 1 until translucent.

Cook rice

Thermomix® Setting
15 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Pour in some of the 2 liters of hot vegetable broth (approx. 200 ml) so that the rice is well covered. Cook for 15 min./100°C/gentle stir setting/reverse. Stir until the liquid is absorbed. Repeat the process with the vegetable broth until the rice is creamy, but the core still has some bite.

Season and refine

Thermomix® Setting
1 min/140°F/Gentle stir speed/Linkslauf 60 Reverse

Season with salt and pepper and add 80 g grated Parmesan. Stir in for 1 min./60°C/gentle stir setting/reverse.
