Description

This recipe for stuffed lentil-feta-peppers is a vegetarian main course that combines Mediterranean flavors. The peppers are filled with a mixture of rice, lentils, feta and parsley and baked in the oven. The dish is easy to prepare, healthy and ideal for a light lunch or dinner. The preparation time is about 45 minutes and the recipe is designed for 4 servings.

Ingredients (8 ingredients)

  • 4 piece Pepper (red)
  • 250 g Express Basmati Rice
  • 1 can Brown Lentils (265 g Drained Weight)
  • 200 g Feta
  • 30 g Parsley (flat)
  • Salt
  • Pepper
  • 2 tbsp Rapeseed oil

Preparation (6 steps)

Prepare peppers

Wash 4 peppers, cut off the lids and remove the seeds.

Prepare rice and lentils

Cook 250 g of express rice in the steamer insert according to package instructions. Drain and rinse 1 can of brown lentils. Dice 200 g feta. Wash and chop 30 g parsley.

Mix filling

Mix the cooked rice, lentils and half of the feta and parsley in a bowl. Season with salt and pepper.

Fill peppers

Fill the peppers with the mixture, sprinkle the remaining feta on top. Drizzle with 2 tablespoons of rapeseed oil.

Bake peppers

Place the peppers in a baking dish and bake in the oven at 200 °C top/bottom heat for approx. 30 minutes until the peppers are soft.

Serve

Sprinkle the remaining parsley on top before serving.
