Description

This Catalan chicken is a traditional dish that always triumphs at home. The combination of chicken with dried fruits and white wine gives it a delicious sweet and sour flavour. I prepare it with chicken thighs, which are more juicy, but it can also be made with the whole chicken cut into pieces. It is perfect for a family meal or a special dinner. The recipe is simple, although it requires a little time for the chicken to cook over low heat and soak up all the flavours. I assure you that the result is worth it! In addition, it is a dish that can be prepared in advance, which makes it ideal for when we have guests.

Ingredients (12 ingredients)

  • 1 kg chicken thighs
  • 2 piece tomatoes
  • 3 piece onions
  • 7 clove garlics
  • 1 puñadito pine nuts
  • 1 puñadito seedless raisins
  • 1 puñadito pitted prunes
  • 1 hoja bay leaf
  • 1 container white wine
  • 1 piece cognac
  • to taste salt
  • to taste pepper

Preparation (10 steps)

Prepare the chicken

If using a whole chicken, ask the butcher to cut it into roasting pieces. If using thighs, season with salt and pepper to taste. Set aside.

Brown the chicken

In a frying pan with a little oil, brown the chicken pieces on all sides. They do not need to be fully cooked, just coloured. Reserve the chicken in a casserole dish.

Toast the dried fruits

In the same pan, lightly toast the raisins, pine nuts and pitted prunes. Add the dried fruits to the chicken in the casserole dish.

Chop the onion and garlic

Cut the onion into large strips and the garlic into slices. Put the onion in the Thermomix bowl and chop 3 Sec./Stufe 5. Remove and set aside.

Sauté the onion and garlic

Add a little olive oil to the Thermomix bowl. Add the chopped onion and garlic and sauté 3 Min./120°C/Stufe 1.

Add the tomato and spices

Thermomix® Setting

Add the bay leaf, grated or diced tomatoes, salt and pepper to taste. Sauté 5 Min./120°C/Stufe 1.

Pour the sofrito over the chicken

Pour the Thermomix sofrito over the chicken in the casserole dish. Add the white wine (or cava or aged wine) and a glass of water. Stir well.

Cook over low heat

Bring the casserole dish to the heat and cook over high heat for 5 Min./keine Temperatur/Stufe 1, to evaporate the alcohol. Then, lower the heat, cover the casserole dish and cook over low heat for 30 Min./keine Temperatur/Stufe 1, stirring occasionally so that it does not burn.

Flambé with cognac

When the chicken is done, remove any excess oil if there is any. Add a splash of cognac and flambé carefully. Let it cook for a few more minutes to integrate the flavours.

Serve

Serve the Catalan chicken hot. Enjoy your meal!
