Description

This chicken recipe is a wonderful way to combine the taste of zaatar and the aromas of banana leaves. The chicken is marinated in a marinade of zaatar and olive oil, giving it a delicious, slightly spicy flavor. The banana leaves give the dish a subtle, sweet aroma and keep the chicken juicy. Perfect for a light lunch or a summer dinner. It goes well with a fresh tomato salad with basil. Preparation is simple and the result is a feast for the senses! Ideal for barbecues or a relaxed outdoor meal.

Ingredients (9 ingredients)

  • Chicken breasts
  • Banana leaves
  • Salt
  • Extra virgin olive oil
  • Zaatar
  • Piccadilly tomatoes
  • Basil
  • Extra virgin olive oil
  • Salt

Preparation (6 steps)

Prepare marinade

Mix 2 teaspoons of zaatar and a little extra virgin olive oil in a small bowl. Mix well until you get a homogeneous marinade.

Marinate chicken

Cut the chicken breasts in half and cut two slices from each half. Put the chicken slices in a baking dish. Spread the prepared marinade on the chicken and massage well. Cover with film and marinate for at least 2 hours.

Prepare cherry tomatoes

Wash and cut the cherry tomatoes. Put the cut cherry tomatoes in a bowl and season with extra virgin olive oil, salt and basil. Mix well.

Prepare banana leaves

Brush the banana leaves with extra virgin olive oil.

Grill chicken

Heat a cast iron grill on the stove. Place the banana leaves on the hot grill. Place the marinated chicken breasts on top and cover with other banana leaves. Place a weight on the chicken breasts and cook for about 7 minutes per side.

Refine chicken

When cooked, transfer the meat to a tray and season with a drizzle of raw extra virgin olive oil and a pinch of salt.
